We all have those mornings when we are in a rush and having breakfast is just too time consuming. Sometimes people will opt for the easy way out and grab a bagel, or an egg McMuffin on the way. We all know the easy way is rarely healthy, and that is why I am sharing these simple and healthy breakfasts you can put together in a couple of minutes! I have tried all these recipes (and I constantly have them for breakfast), and I can assure you they are delicious!
1. Peanut Butter Banana Sandwich
Ingredients:
1 small banana
1 tbsp peanut butter (or nut butter of choice)
2 slices whole grain bread
1/2 tbsp chia seeds (optional)
Preparation: Spread your choice of nut butter on bread, cut up the banana and place it on the nut butter. Top with chia seeds for extra Omega-3!
2. Smoothie Bowl
1 banana
1 cup of berries, plus extra for topping
1/3 cup of coconut water/ non-dairy milk or water
Choice of nuts/ seeds for topping
Preparation: Blend everything together until smooth. Pour in a bowl, and top with your choice of fruit, nuts and seeds!
3. Chocolate Oatmeal
Ingredients:
2/3 cup oats
1 1/4 cup non-dairy milk
1 tbsp cocoa powder
1tsp vanilla
1 tbsp sweetener (preferably stevia or coconut sugar)
1 tbsp flaxseed meal (optional)
1 tbsp chia seeds (optional)
1 tbsp nut butter of choice
Fruit of choice
Preparation: On medium to low heat, warm the non-dairy milk and add the cocoa powder, vanilla and sweetener and stir until it is all combined. Then add the oats, flaxseed meal, and chia seeds, and stir. Let it cook, stirring occasionally. Once the desired textured is achieved, place in a bowl and top with your choice of nut butter and fruit.
4. Green Smoothie
1 cup spinach + kale
1 banana
1 mango
1 cup pineapple slices
1/3 cup water
3-5 Ice cubes
Preparation: Blend it all together and enjoy!
5. PB+Jelly on Grain Bread
2 slices whole grain bread
1 1/2 tbsp peanut butter (or other nut butter)
1 tbsp jelly of choice
1 tbsp chia seeds
Preparation: This is just a healthier version of your regular PB+J. Toast bread, spread nut butter on bread, spread jelly on top of nut butter, and top with chia seeds! Feel free to add some sliced banana on top.
