One of my most favorite things in the entire world is banana bread. When I was home this past summer, I think between my mom and we made at least 10–not to mention the dozens of zucchini bread loafs she made with the zucchini from my sister's garden. Here is a simple recipe that I swear by to make my favorite snack!
Ingredients
2-3 ripe bananas 🍌
1/3 cup melted butter
1 tsp baking soda
pinch of salt
3/4 cup sugar (1 cup if you want it to be sweeter!)
1 large egg, beaten
1 tsp vanilla extract
1 1/2 cups all-purpose flour
sprinkle of cinnamon (optional)
Basic Instructions
1. Preheat oven to 350ºF. Butter an 8 in x 4 in the loaf pan, then sprinkle flour in the pan and dump out excess.
2. Peel bananas and mash with a fork until smooth. Melt the butter and mix it in with the mashed bananas.
3. Mix in baking soda and salt. Stir in sugar, vanilla extract, and the beaten egg. Finally, carefully add the flour.
4. Pour batter into the prepared pan. Bake in an oven for 50 minutes.
5. Remove from oven and let cool. Store in fridge in either plastic wrap or foil.
