Avocado in brownies? It's actually delicious and I promise you can't taste the avocado at all. It just makes the brownies fudgy and fills it with nutrients that are good for your hair and skin and contains fats that are heart-healthy. Ingredients:
1/4 cup mashed avocado
1/4 cup extra-virgin olive oil
1 cup gluten-free flour (or white whole wheat flour if not gluten-free)
1/2 cup unsweetened cocoa powder
3/4 cup maple syrup
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup water
1 cup vegan dark chocolate chips
3 tablespoons ground coffee (optional)
Directions:
Preheat your oven to 350 degrees and begin to mash your avocado. 1/4 of a cup will be about 1/2 of an avocado, depending on the size of your fruit. Make sure that this is mashed very well. If you want you could puree it in a blender but a fork will work just as well.
Place that into a medium bowl. Add the olive oil and mix well. Continue by integrating your flour of choice, unsweetened cocoa powder and maple syrup. The maple syrup is a good alternative to refined sugars. After that is well mixed, add in the rest of your ingredients ( baking soda, salt, water, chocolate chips and ground coffee).
When all your ingredients have been added, begin to grease your brownie pan(I used an 8x8 inch pan), with a little bit of olive oil or oil of choice. Smooth your batter onto your pan and place in the oven for 15-20min.
To check if your brownies are baked, stick a knife into the center of them, if it comes out clean then they are ready! Keep in mind that there will be melted chocolate chips in there. Once out of the oven let them cool and then cut. I had no patience and cut right into them (made for very messy edges!)
Your brownies will be very dark because of the maple syrup but the flavor will be the same as any other brownie. Maybe even better. And they will keep very well outside of the fridge for two days.
