10 Recipes To You Back On That Health Track Again

Going back to your sorority house with Fried Fridays every single week sometimes makes it impossible to get back on track even after you say you're going to get on the healthy track for this new year. Simply cutting back can make it easier, but if you love to cook at home, here are some quick and easy recipes to make. You won't even realize that you are eating clean.

1. Veggie "Sushi" Rolls

This recipe is so yummy because it is simple. For people who don't typically like fish, this is a winner. I am obsessed with avocado so this recipe puts it to good use. I like to also add carrots and cucumbers in my roll and just wrap it in seaweed. Can you say yum?

2. Stuffed Sweet Potatoes

This one is so easy to make, it gives you a good amount of protein too. All you need is a sweet potato, black bean burger, Colby jack cheese and some avocado. Click the recipe below in order to see what other things you can add to spice it up.

3. Parmesan Zucchini and Corn

This recipe has zucchini, corn and parmesan. I also like to add squash to this recipe when it is in season. An easy way to get your veggies.

4. Fish Taco Bowls

The next two recipes are for fish lovers. I like to grill my fish for this with some cajun seasoning to add a little kick to it, but that is optional. This is a healthier version compared to going to Chipotle. It gives you more free range to add whatever toppings you want to a bowl. It also keeps you full for a long time.

5. Tuna Stuffed Avocado

This is to die for. Tuna, avocado (yes, again), red/yellow peppers and if you want to kick it up like I do, then add some diced jalapeños. Yum!

6. Quinoa Fried Rice

This tastes just like fried rice from your local Japanese restaurant ,and is a way healthier and cheaper option than going to hibachi at Hokkaido. It is super awesome to make a big pot for a girls night in with your best friends.

7. Spicy Steak with Asian Slaw

This one takes a little more time and is more practical for the weekends. It can also be used during the week as leftovers. At Aldi they sell steaks for very cheap, and if you add the right seasonings this will taste amazing. This recipe is a great way to get your steak fix.

8. Spaghetti Squash Lasagna Boats

Love, love and love this recipe. Honestly, this is very easy to make, and if you aren't a fan of spaghetti squash, then you can make zucchini boats instead. It is awesome because you won't feel bad about eating Italian-inspired food. Less carbs, but still one happy foodie.

9. Crock Pot Cauliflower Mac & Cheese

It tastes just like Mac & Cheese...need I say more? Also a great way to get your veggies, but it tastes like you are eating carbs.

10. Whole Grain Pasta Dish

Asparagus, mushrooms, parmesan and whole-wheat noodles. This recipe is for the veggie lover for sure. I like to make a garlic and light butter sauce to put on top.

Epic Creation Myths: Norse Origins Unveiled

What happened in the beginning, and how the heavens were set in motion.

The Norse Creation Myth

Now, I have the everlasting joy of explaining the Norse creation myth. To be honest, it can be a bit kooky, so talking about it is always fun. The entire cosmos is included in this creation myth, not just the earth but the sun and the moon as well. This will be a short retelling, a summary of the creation myth, somewhat like I did with Hermod's ride to Hel.

beer on the beach

Summer is hot and humid, and it's almost like summer was made specifically to drink the refreshing, cold, crisp wonderful, delicious, nutritious nectar of the gods.
