1. Veggie "Sushi" Rolls
This recipe is so yummy because it is simple. For people who don't typically like fish, this is a winner. I am obsessed with avocado so this recipe puts it to good use. I like to also add carrots and cucumbers in my roll and just wrap it in seaweed. Can you say yum?

2. Stuffed Sweet Potatoes

4. Fish Taco Bowls
The next two recipes are for fish lovers. I like to grill my fish for this with some cajun seasoning to add a little kick to it, but that is optional. This is a healthier version compared to going to Chipotle. It gives you more free range to add whatever toppings you want to a bowl. It also keeps you full for a long time.

5. Tuna Stuffed Avocado
This is to die for. Tuna, avocado (yes, again), red/yellow peppers and if you want to kick it up like I do, then add some diced jalapeños. Yum!

7. Spicy Steak with Asian Slaw
This one takes a little more time and is more practical for the weekends. It can also be used during the week as leftovers. At Aldi they sell steaks for very cheap, and if you add the right seasonings this will taste amazing. This recipe is a great way to get your steak fix.

8. Spaghetti Squash Lasagna Boats
Love, love and love this recipe. Honestly, this is very easy to make, and if you aren't a fan of spaghetti squash, then you can make zucchini boats instead. It is awesome because you won't feel bad about eating Italian-inspired food. Less carbs, but still one happy foodie.
