Kale used to be the "it" food—not only could you make almost anything out of it, kale is also hella good for you. It's green, so its packed with antioxidants and other good things as well as being rich in fiber. It also has tons of vitamins, like Vitamin C, A, K, and B6. Kale is good in salads, as chips, sautéed, and massaged. Even Beyonce loves kale.
But kale should watch its back. Avocado stole the spotlight for awhile (with good reason), but it's clear that the new hip way to eat anything is to put an egg on it.
Not only are eggs delicious, they are also arguably just as healthy as the former food king and green leaf, kale. Eggs are high in protein and Vitamin D, B2, B6, and B12, and provide selenium. Eggs yolks have gotten a bad rap for their cholesterol, but as long as you stick to one egg a day, you are in the clear.
Eggs are are all over foodies Instagram's and there is even a yolk porn hashtag.
Eggs are very versatile—they can be eaten with any meal, at any time of day.

You can even put an egg on top of kale.
You really can't go wrong. So head out to your local farmers market or food co-op, get yourself a dozen eggs, and get crackin'.
