About six months ago, my doctor told me to steer clear of dairy and gluten for health reasons, but I didn't listen. It wasn't until about two months ago when I started to really get into it and follow the diet strictly (aside from a few slip ups), and the results are amazing - I feel so much better when I don't eat dairy and gluten. When I tell people this, they often express interest in wanting to try it or they tell me they have wanted to try it in the past but it just seemed so hard. What could you possibly eat that doesn't contain gluten or dairy? It's taken some research and experimentation but I feel pretty solid with my eating choices now and for the most part feel comfortable living gluten and dairy free. By no means do I have the healthiest or cleanest diet in the world, but I think it's a realistic diet for a college student. So without further ado: here is what I ate on January 8th, 2016!

BREAKFAST 9:00AM

When I first wake up I'm not super hungry so I like a cup of tea to sip on until I get hungry. It's also good to hydrate first thing in the morning so this is a good way to do that!

Then once I was ready for some food, I decided to make a smoothie bowl. I used about two cups of frozen fruit - a mix of strawberries, mangos, mandarins, and pineapple. I also included one ripe banana, half a frozen banana, a handful of spinach, and a splash of almond milk.

Then I just topped it with some gluten free granola! Super easy and delicious!


LUNCH 12:45PM

I was super lazy for lunch so I just heated up this Amy's gluten free, dairy free bean and rice burrito. Not the healthiest I'm sure, but it is what it is.

And I just ate it with some chips and salsa and called it a day.


SNACK 4:00PM

When I was out running some errands, I saw this and wondered if it would work with almond milk so I picked it up and made it for snack.

The texture was a bit off, I don't know if it was because of the almond milk or because they were gluten free but they were still super yummy!


DINNER 7:30PM

For dinner I just made a super simple stir fry with gluten free soy sauce and some frozen broccoli and green beans I had in the freezer and then I just added some yellow onion. Once those were fully cooked, I added some rice.

I hope this was somewhat interesting or helpful! It's not as hard as it looks!
