When I went vegan, scrambled eggs were something that I missed but this scrambled tofu recipe is even better! It is well seasoned and has no cholesterol so it is the best of both worlds!
Scrambled Tofu
1 pkg medium tofu
1/2 t. garlic powder
1/2 t. onion powder
1/4 t. turmeric
1/2 T. dried parsley flakes
1/2 T. seasoning of choice
1-2 t. chicken-like seasoning
1/2 T. nutritional yeast
Preheat a large nonstick frying pan. Drain and rinse the tofu. Chip and mash into the frying pan. Sprinkle all seasonings equally over the tofu and mix well.
Stir occasionally. Cook until most of the moisture has disappeared. Serve fresh and hot.
Garnish with parsley and tomato wedges.
Onions, mushrooms, peppers can also be added.
