Eating vegan can seem incredibly challenging, mostly because it is very difficult to give up foods that you enjoy eating. After following a vegan diet for a year and half, I have managed to find new favorite foods and alternatives to my old favorite foods. Sandwiches are a stable lunch item in the standard American diet; I have come up with a few different delicious sandwich ideas that have become my go to packed lunch item for a day on the slopes.

Fruity PB & J Sandwich

Bread of choice, peanut butter, sliced bananas, blueberries & raspberry preserves.

Avocado Sandwich

Bread of choice, avocado, tomatoes, lettuce, bell peppers & any other veggies or fresh herbs of choice. (Sprouts, onion, cilantro, basil, mushrooms)

Hummus Sandwich

Bread of choice, hummus, sprouts, cucumbers, spinach & lemon juice.

Veggie Burger

Bread of choice, vegan burger of choice, tomatoes, lettuce, avocado, ketchup & any other fixings.

Vegan Fried Chicken Sandwich

Bread of choice, vegan chicken nuggets (Gardein brand is great!), avocado, lettuce, & hot sauce.

These are a few of my favorite sandwich combos at the moment, these all take just a few minutes to prepare and make for a great healthy packed lunch choice! I really enjoy having these sandwiches on toasted whole grain seed bread.

Raising the minimum wage to a livable wage would not only benefit workers and their families, it would also have positive impacts on the economy and society. Studies have shown that by increasing the minimum wage, poverty and inequality can be reduced by enabling workers to meet their basic needs and reducing income disparities.

I come from a low-income family. A family, like many others in the United States, which has lived paycheck to paycheck. My family and other families in my community have been trying to make ends meet by living on the minimum wage. We are proof that it doesn't work.

Every college student knows and understands the struggle of forcing themselves to continue to care about school. Between the piles of homework, the hours of studying and the painfully long lectures, the desire to dropout is something that is constantly weighing on each and every one of us, but the glimmer of hope at the end of the tunnel helps to keep us motivated.
