I'm a vegetarian who sometimes likes the challenge of eating a vegan diet. A lot of people don't get what vegans eat. They think that there is no other food besides meat and animal products. I'm here to prove that theory wrong. These are a few of my favorite filling vegan meals.
1. Sticky Sesame Cauliflower
This recipe is essentially General Tso's chicken, but vegan. Cauliflower is a great alternative to meat because it sucks up the flavor of whatever you cook it with. In this case, the sauce packs a flavorful punch.

2. Sweet Potato And Zucchini Fritters
These fritters are perfect with the mustard sauce of the recipe or just plain old ketchup. The crunch on the outside of each fritter is to die for. Throw it on a bun with some lettuce and tomato and call it a veggie burger. Although the original recipe requires an egg, there is a vegan option using an egg replacement.

3. Zoodles With Creamy Avocado Pesto
Who doesn't love to bury their sorrows in a big bowl of pasta? With the sauce on top, its hard to tell that the "noodles" are actually made up of 95% water. Any vegan recipe that has the word "creamy" in the description has me hooked. Not only is this dish delicious, but it is extremely healthy.

5. Mexican Black Bean Burger
I'm not normally a fan of mexican food, but this burger is as close as it gets to the real thing. It's packed with spicy flavor and is very filling. Pair it with some fries and ketchup and you got yourself a vegan barbecue.

6. Brownies
Okay yum. I will admit, it can be difficult to find vegan chocolate chips but this is so worth it. I mean, come on, just look at that chocolate-y goodness.
