Congee is a food that is very easy to make and is an amazing breakfast food. It is a food that I try to get at least one bowl of when I am back in China. So, here's the recipe:
1 c. long grain white rice
9-10 c. water
2 T. kosher salt
chopped cilantro and scallions
In large pot, bring rice, salt and water to boil and then stir. Boil for 5 minutes and reduce the heat down to low and simmer, covered loosely with the pot cover.
Simmer for 1.5 hours until consistency of oatmeal. Stir frequently the last 1/2 hour of cooking.
Serve hot in bowls.

garlic
tofu
egg
pickled mustard greens
shiitake mushrooms
red pepper flakes
