As some of you may not know, I am gluten free, and it is NOT by choice. I developed a gluten intolerance my junior year of high school, and I have been gluten free ever since. So, for five years I have experienced pretty much what every person who has a gluten intolerance and or Celiac disease faces all the time.
1. When you tell someone you are Gluten Free
I always love the reactions I get when I tell people I am gluten free. People honestly think that you have the most traumatic life.
2. When you have a dream about eating regular food again
I think the worst is knowing what that food tastes like, and having to watch everyone else eat it....
3. When you see some new Gluten Free product, so you try it and instantly regret it
4. When everyone thinks you are part of a fad diet... um, NO!
5. When you finally get the Gluten free flour consistency right
6. When you accidentally have gluten again, and you feel like you have died
7. When you meet another Gluten free person, and instantly understand each other's struggles in life
8. You honestly hate eating out because you don't know what is gluten free on the menu, but you still go out
9. When you find an amazing Gluten Free recipe on Pinterest, and all you want to do is share it with the world
You just have to share it with everyone you know that is gluten free.
10. Don't you miss gluten?
EVERY DAMN DAY.
