Thanksgiving Leftovers Recipes

Thanksgiving Leftovers Recipes
Serious Eats

1. Turkey Pot Pie

Leftovers used:
Turkey
Potatoes
Peas

What you'll need:
2 tablespoon of butter
1 chopped onion
2 chopped stalks of celery
3 chopped carrots
4 tablespoons of flour
4 cups of chicken or turkey stock
2 peeled and diced potatoes
2 cups of shredded turkey
2 tablespoons of chopped parsley
1/2 cup of frozen peas (thawed)
1 prepared pie crust
1 lightly beaten egg

What to do:
1. Melt butter in a saucepan and cook the chopped onion until tender. Add in the carrots and celery and cook for 2 more minutes. Add in the flour and cook for another 2 minutes. Add in the chicken or turkey stock and bring to a simmer, then add in potatoes and simmer until tender. Add in the turkey, parsley, and peas
2. Pour the mixture into a casserole dish, top with the pie crust and brush with the egg
3. Bake for 30 minutes or until crust is golden brown, then enjoy!

2. Leftovers Quesadilla Bar

Leftovers used:
Everything!

This is a super fun, and creative way of ridding your fridge of all leftovers: set up a quesadilla bar! Give everyone the option to fill their quesadilla with whatever they want: turkey, stuffing, mashed potatoes, cranberry sauce, peas (they even have a dessert recipe to make with sweet potatoes, white chocolate, and chai)!

3. Thanksgiving Wedge Pies

Leftovers used:
Turkey
Mashed potatoes
Cranberry sauce

What you'll need:
1 (15 ounce) package pastry (9 inch pie crust)
1/2 cup shredded turkey
1/2 cup mashed potatoes
1/4 cup cranberry sauce
1 egg
1 tablespoon of water

What to do:
1. Preheat your oven to 450°F and line a baking sheet with parchment paper.
2. Roll out the pastry and cut in quarters
3. Spread 2 tablespoons of mashed potatoes onto each pastry (make sure to leave a little room on the edges to seal later). Put 2 tablespoons of turkey on top the mashed potatoes. Put 1 tablespoon of cranberry sauce on top the turkey. Top each pastry with another pastry quarter and seal the edges with a fork
4. Whisk eggs and water in a bowl. Brush mixture on each pastry piece. Cut a slit into the top of each pie, then put the pies on the baking sheet
5. Bake for 15-20 minutes, or until golden brown. Then gobble em up!

4. Fried Stuffing Bites (with cranberry pesto)

Leftovers used:
Stuffing
Cranberry sauce

What you'll need:
Leftover stuffing (as much as you want)
2 eggs
2 teaspoons of milk
1 cup of breadcrumbs
1 cub of cranberry sauce
1/2 teaspoon of ground black pepper
1/2 cup of walnuts
Oil for frying

What to do:
1. Preheat oil to 350°F
2. Cut your leftover stuffing into small cubes
3. Whisk the eggs and milk in a small bowl. Coat each cube in the mixture, then roll in breadcrumbs until they are completely coated
4. In a food processor, blend cranberry sauce, pepper, and walnuts (set aside when done)
5. Fry each cube until golden brown.
6. Wait until cool then serve with cranberry pesto!

5. Thanksgiving Turkey Dinner Sandwich

Leftovers used:
Everything!

My favorite part of Thanksgiving is this sandwich I get to make with all the leftovers in my fridge the next day. I make myself a huge open face Thanksgiving meal sandwich using everything from turkey, stuffing, mashed potatoes, gravy, peas, and cranberry sauce. Try making this gigantic Thanksgiving Turkey Sandwich (if you're still not totally stuffed from making all the other recipes)!

I think the hardest thing about going away to college is figuring out how to become an adult. Leaving a household where your parents took care of literally everything (thanks, Mom!) and suddenly becoming your own boss is overwhelming. I feel like I'm doing a pretty good job of being a grown-up, but once in awhile I do something that really makes me feel like I'm #adulting. Twenty-somethings know what I'm talking about.

Chandler Bing

I'm assuming that we've all heard of the hit 90's TV series, Friends, right? Who hasn't? Admittedly, I had pretty low expectations when I first started binge watching the show on Netflix, but I quickly became addicted.

Working with the public can be a job, in and of itself. Some people are just plain rude for no reason. But regardless of how your day is going, always having to be in the best of moods, or at least act like it... right?

1. When a customer wants to return a product, hands you the receipt, where is printed "ALL SALES ARE FINAL" in all caps.

2. Just because you might be having a bad day, and you're in a crappy mood, doesn't make it okay for you to yell at me or be rude to me. I'm a person with feelings, just like you.

3. People refusing to be put on hold when a customer is standing right in front of you. Oh, how I wish I could just hang up on you!
