Are you a college student? Do you have a microwave? Do you like sweet treats? If you said yes for any of the three above questions, then you are in for a delight as here are three delicious treats you can whip in in a jiffy in the comfort of your own dorm room. So grab your mug/bowl and start planning what are you going to make next.

1.Microwave cookie- A warm chocolate chip cookie can make anyone go weak at their knees; especially if it has a nice dollop of ice-cream on top.

You will need-

  1. 1 tablespoon butter
  2. 2 tablespoons sugar
  3. A few drops of vanilla extract (depending on your preference)
  4. 3 tablespoons of flour
  5. 2 tablespoons of chocolate chips

Mix together all the ingredients and microwave for 15-second intervals. Keep stirring until the surface looks dry/cooked. The cookie will be very hot and will continue to cook after you take it out of the microwave so be careful!

2. Cashew nut Brittle- This is my grandma’s tried and tested recipe that she has been making for the family for years. Start to finish, all you need is 10 minutes so if you have the ingredients on hand, get cracking on this addictive snack

You will need-

  1. 1 tablespoon butter
  2. 1 cup sugar
  3. ½ cup light corn syrup
  4. 2 cups cashew nuts
  5. 1 teaspoon baking soda
  6. A few drops of vanilla extract (depending on your preference)
  7. A small sprinkle of salt

In a microwave, safe bowl, combine sugar and corn syrup for 3 minutes (depending on your microwave). Fold cashew nuts into the sugar-corn syrup mixture and microwave for another 3 minutes. Add vanilla extract and microwave for another minute to nicely incorporate the vanilla flavor in the mixture.

Add baking soda into the hot mixture, mix and immediately spread onto a greased baking dish. Be very careful as you are working with hot sugar. Add a very small pinch of salt; it helps accentuate the sweetness of the brittle. Allow the mixture to cool for an hour and break the brittle into small pieces. Store in an airtight container.

Now I prefer to use cashew nut as it one of my favorites but you can use any variety that you like. Almonds, pistachios, macadamia nuts; the possibilities are endless.

3. Microwave granola- A high school favorite! This tasty snack is ready to eat in less than three minutes and pairs superbly with flavored yogurt, milk or even by itself.

You will need-

  1. 1 tablespoon maple syrup
  2. Chopped nuts and/or seeds
  3. 1/3 cup quick cooking oats
  4. 1 tablespoon water
  5. 2 tablespoons of butter (substitute with olive oil if vegan)
  6. A very small sprinkle of salt

In a microwave-safe bowl, combine water, maple syrup, quick cooking oats, butter, and salt. Microwave on high power for two minutes but periodically pause and stir the mixture to ensure that the syrup is evenly coating the oats. Cook until the oats turn golden brown.

Once the oats are cooked, add any type of nuts, seeds and/or dried fruit. To spice it up, you can even add spices such as cinnamon or nutmeg. The possibilities are endless and that is what makes this such an awesome college dorm recipe.

One note- if you are planning to use dried fruit, please do not add them during cooking. They will become incredibly hard and make your granola almost impossible to eat.

"College will be the best four years of your life" is a phrase that we have all heard growing up. College is painted as a magical place to us while we are in high school. A place you go to learn, meet your best friends and probably have the time of your life while all of this is going down. Four whirlwind years, where everything that you've known changes and you start to learn what it means to live on your own, have a job, etc. But what about those of us who don't do this all in four years? Major changes, hard courses, switching schools, career paths changing, these are just a handful of factors that could extend your four years to five, six or seven. There is nothing wrong with taking extra time to graduate, but returning as a fifth-year is a little different. Most of your best friends have most likely graduated and moved and while you may be one of the oldest undergraduates on campus, you might feel as awkward as a freshmen. A world that became home and comfortable to you is still there but it's slightly different than you've known it to be and you have to find a groove to fall into.
