Right now it feels like you need to do everything. You're young, excited and full of potential. With your "never say no" attitude, you do all you can to show off that potential and gain valuable skills. You find yourself running on caffeine and no sleep, drinking coffee like its water and carefully analyzing your tasks at hand.

Breathe.
Step back and relax.
It's okay to say no and complete your current list of tasks. It's okay to take time for you.
In our busy world, it's easy to become consumed by work and go multi-task our day away. College students do it. Young professionals do it. Experienced employees do it. Everyone does it. Regardless of your age, everyone takes on some form of workload that requires multi-tasking and being consumed by paperwork. We stalk our tasks up until we're no longer to see over our pile- sometimes literally.
Eventually, you become aware of the impact this has on you. You're stressed, anxious, and depressed. You don't sleep and your diet is poor. Irritability takes over your personality.
It's okay to take time for yourself. It's vital to your survival.
Once you realize that you're being consumed by school or work, it's okay to prioritize and say no when someone wishes you perform another job or run another errand for them. Taking deep breaths and relaxing at your desk briefly can help alleviate stress and help you decompress. Walking, running, bubble baths and playing with dogs while at home can help you overcome the stress you are feeling.
Don't be afraid to breathe deeply.
Talk with co-workers or your friends about what they do to time manage and cope with stress. Buy and awesome planner. Make time to be a human being.
Your body and mind will appreciate it.
