Tacos: A Love Story

Let's 'taco bout it.

Tacos: A Love Story
American Mexican Food Tacos

Before I begin, I would just like to say that if you do not like tacos, I'm sorry, but I do not appreciate you as a human. I mean seriously, I don't care if it's a Choco Taco or Tacos al Pastor...there is a taco out there for everyone. A taco waiting for you to enjoy every inch of its delectable insides is always just what the doctor ordered after a long day of classes or a quick taco craving at the lunch hour. To be quite honest, I wouldn't judge you if you wanted to nosh on tacos in the morning hours as well. TACOS AT EVERY MEAL. Alright here comes my rant. You can put on your sombrero now.

First off, I don't discriminate against tacos. I don't care if you're a fresh, health-conscious person who prefers a corn tortilla featuring lettuce, pico de gallo and a light mahi-mahi. Or if you're into beefy and cheesy tacos smothered in guacamole and sour cream. Personally, I'm into a hard shell taco toasted up in the oven for optimum crispy deliciousness, with ground meat (beef, chicken or turkey...I don't care) and topped with lettuce, peppers, guac and medium salsa. Perfection. God bless, America.

Moving on, I would like to discuss the fact that tacos have their very own day of the week, EVERY WEEK. Taco Tuesday is a beautiful occasion because 1. This is a day I can celebrate my favorite meal of all time and 2. Because it gives me a reason to look forward to ending my day and winding down on the most random day of the week— Tuesday. Can you tell me another food group that has its own day of the week? Yeah, I didn't think so.

Tacos pair well with several things. Most importantly, margaritas. "Yo Lex, want to get tacos and margs tonight?"

Come one now, of course I do. What a silly question!

A pitcher of margaritas and a plate of hot tacos is perhaps my favorite way to end the week. The salt, striking taste of tequila and fruity accent of lime pairs flawlessly with the crunch and spicy goodness of a taco. Margs and tacos, tacos and margs. It just makes sense.

The truth it, tacos bring people together. Whether you're spending time preparing ingredients and making your own for a family dinner or having a night out at your favorite Mexican joint with your besties, tacos are great way to spend time and socialize with your favorite peeps in your life.

We are all a part of a big taco. Some of us are the sweet mango salsa that keeps everyone grounded, while some of us are the spicy habanero pepper that keeps everyone on their toes and makes life exciting! Maybe you're the crunchy outer shell that runs the show and brings everyone together. Whatever part of the taco you are, remember that you are a special part of creating that perfect bite.

As college students, we are all familiar with the horror show that is course registration week. Whether you are an incoming freshman or selecting classes for your last semester, I am certain that you can relate to how traumatic this can be.

1. When course schedules are released and you have a conflict between two required classes.

Bonus points if it is more than two.

Raising the minimum wage to a livable wage would not only benefit workers and their families, it would also have positive impacts on the economy and society. Studies have shown that by increasing the minimum wage, poverty and inequality can be reduced by enabling workers to meet their basic needs and reducing income disparities.

I come from a low-income family. A family, like many others in the United States, which has lived paycheck to paycheck. My family and other families in my community have been trying to make ends meet by living on the minimum wage. We are proof that it doesn't work.

Every college student knows and understands the struggle of forcing themselves to continue to care about school. Between the piles of homework, the hours of studying and the painfully long lectures, the desire to dropout is something that is constantly weighing on each and every one of us, but the glimmer of hope at the end of the tunnel helps to keep us motivated. While we are somehow managing to stay enrolled and (semi) alert, that does not mean that our inner-demons aren't telling us otherwise, and who is better to explain inner-demons than the beloved April Ludgate herself? Because of her dark-spirit and lack of filter, April has successfully been able to describe the emotional roller-coaster that is college on at least 13 different occasions and here they are.
