Since becoming vegan, I have found that cooking is not only easier, but my meals taste amazing! I won't lie, when I made the transition, my first thought was, "What will I even eat?!" Pinterest came in so handy. I was also able to let my creative side out when cooking! There are endless options that taste yummy and are so simple to make! I'm going to share a few of my favorites (and you guys can thank me later!).



Summer Corn, Avocado, and Black Bean Salad!

You guys, I wish I could jump through this screen and let you all taste this! It is unbelievable! And so easy to make! I made this for the first time this weekend when a few (non-vegan) friends came over and it was a hit! It's a perfect summer recipe that can easily be brought to a party or made for dinner. We ate it with chips, but this can no doubt be eaten alone, or even on a tortilla! I promise, you will not be disappointed!

The Ultimate Chewy Chocolate Chip Cookies!

Who says vegans can't eat chocolate chip cookies! Sweets are my weakness, there's no arguing that. I feared (dramatic, I know) that once I went vegan I wouldn't be able to eat yummy desserts, but, boy, was I wrong! Again, I made these cookies this weekend, and talk about delicious! I am being 100 percent honest when I say that I could not taste the difference between these and a regular chocolate chip cookie. How are they vegan, you ask. Earth Balance butter, almond milk, no eggs and dairy-free chocolate chips. Bam. Do yourself a favor and try these now!

Veggie and Rice Bowl (Plus More)!

This is hands down the easiest, quickest, and yummiest (is that a word?) dinner I make! I can't stress enough how simple this is to throw together, yet how wonderful it tastes! It's exactly what the title says and a little more!

For my bowl I use:

- 3 min. microwavable rice from Trader Joe's

- Black beans

- Veggies: bell pepper, tomato, avocado, zucchini, shredded carrots, cucumber, and lettuce, (feel free to add any and all vegetables you like)

- After I add all of that to my bowl, I add my sauce. Some nights it's soy sauce, and others it's simply sriracha.

It's so filling and the options are endless to ingredients that you can add!



I hope this gave you some ideas for quick and easy recipes that can be made at home, or even brought to your friends BBQ!

Growing up I have always wanted to own a horse. My grandparents own a well known equestrian facility in Georgia, so I have been riding since I was born. A bond between a person and their horse is a bond so strong that it cannot be broken. Everywhere I went I wanted to be around horses, even forcing my family to go on trail rides during vacations. College is super hard. Between working, studying, and having a social life, it feels like a struggle to just keep afloat.

I understand. When you feel like your drowning and there's no way to stay afloat I understand that it feels like everyone else is doing just fine. I understand all the frustration, long nights in the library, and that feeling that you want to just throw in the towel. I understand that sometimes it's too hard to get out of bed because your brain is already filled with too much information to remember. I understand because I am also feeling pretty burnt out.

Some of the best advice I've ever received was from my social studies teacher in sophomore year of high school. He stated, "If you don't know it at midnight, you're not going to know it for the 8 a.m. exam, so get some sleep."

It's such a simple piece of advice, but it holds so much accuracy and it's something that the majority of college students need to hear and listen to. "All-nighters" are a commonality on college campuses in order to cram in studying for an exam that is typically the next day.

Sometimes my brain just starts turning on an idea and it doesn't want to stop.

I don't know if it is related to my anxiety, perfectionism or depression. I don't know why it happens. It's frustrating, it's painful and it stops me from functioning.
