We all know (and most likely love😜) the classic Shrimp Scampi. In New England, this dish is commonly known as a big ol' bowl of fettucini covered in a garlic sauce and topped with some deliciously sautéed garlic shrimp.
I, of course, love this standard version of scampi but come on! It's 2017 and...let's face it: carbs are SO last year!
The latest and greatest cauliflower 'rice' is a new-found favorite in the health community. It acts as a versatile stand-in for rice that provides a very similar texture with an easily manipulated taste.

2 Tbsp olive oil (+ 1 tsp)
6 to 8 shrimp, peeled & washed
2 tsp parsley
1/4 to 1/2 tsp garlic powder
Salt & pepper to taste
4 large cloves garlic, minced
1 cup cauliflower rice
1 Tbsp water
