Serrano's Tacos: Changing the Way We View Food Trucks

“No matter the amount spent, I want a taco from Serrano's to be your best purchase of the day.” These are the words of Samuel Rubin, the Chef of Oxford’s first food trailer. Using fresh ingredients and distinct flavors, the new addition to the Square’s culinary options will provide customers with late-night authenticity at an affordable price. Rubin is proud of his craft and confident that Serrano's will have a permanent place in Oxford. He wants to change the way we view Food Trucks. It’s working.

Serranos was created by the entrepreneurial efforts of Ole Miss students: Stuart Monteith, Andrew Bracy and Eric Olsson. They discovered an untapped market in Oxford that a professional food truck could fulfill. The Square primarily offers dine-in restaurants and almost no take-out, particularly no late night take-out. Also, while the town’s cuisine is delectable, it lacks diversity in food pricing and quality. The Serrano's team however sees this as an advantage noting that Ole Miss students are already fine-tuned with an appreciation for good food. In February 2014, the students designed a business plan to put a well-needed food truck on the Square. Finally in September, Serrano's Tacos became a reality.   

The location of Serrano’s is the key to its success in picking up Square goers on their way home from the bars. From experience, I have used the taco truck as a second to last stop for the evening. Having grown up in Houston, the colorful scene of a late night food truck serving high quality Tex-Mex is not uncommon, however I would have never thought to find one in Oxford. I never thought I would find good Tex-Mex in Mississippi. Serranos proved me wrong. I’ve learned to always request daily special, gaining a particular taste for the spicy chicken taco. The menu is crafted according to Rubin’s plan for the day, with a distinct emphasis on the specials. Pulled-pork, fried catfish, and citrus Asian duck breast are only a few examples of the variety of tacos Rubin plans to serve. Don’t be fooled by the five-minute wait, your taco is being made to the highest of standards. With so many advantages, Serrano's only lacks the tables for one to enjoy the atmosphere a little bit longer.   

The attention to authenticity is only matched by a passion for fresh ingredients. After speaking for an hour with Rubin, I learned that I didn’t know anything about food. After years of restaurant experience, I never once found curiosity for the science in the kitchen. I couldn’t help but feel a sense of shame for any past trips to Taco Bell. When discussing condiments, Rubin informed me that mayonnaise loses ninety percent of its original fresh contents if stored for only one day. This is why everything served at Serranos has been prepared that same morning.  The dedication to quality is evident in the way he discusses his craft. His vision for Serrano’s future multiple locations around Oxford that will offer delivery as well as take-out.  “As the food grows, so will the business,” claims Rubin.
