Of a dorm room! A quick recipe that is easy to make with a small budget

While living on campus without a dining plan this summer, I had to “adult” up and cook more than pasta or ordering take out. Here’s a recipe that is simple to make and easy on your wallet too!

BBQ Chicken Wraps

What You Need:

1 Rotisserie Chicken

1 Bottle of BBQ sauce

1 Package of Shredded Cheddar Cheese

1 Pack of White Wraps

Tinfoil approximately 2 sheets

1 teaspoon of olive oil

1 Pan

1 Spatula

2 Forks

1 Knife

Access to an oven

Let's Get Cooking!

Step 1: At your local super market or dining hall (if you’re thrifty) grab some wraps. I used white, but free to experiment! While at the store buy some BBQ sauce, cheddar cheese, and a rotisserie chicken. See image below in case you don't know what that is.


Step 2: If you have a small fridge like me it is a good idea to break down your chicken (cut your chicken into smaller pieces, i.e. breast meat, drumsticks, wings) so it fits into a container(s). Once you’ve broken the chicken down, take some chicken breast and shred with two forks to desired consistency. See image below for technique.


Step 3: Take two pieces of tinfoil and place one wrap on each piece. Divide the shredded chicken between the two wraps. Scoop approximately 1 tablespoon of BBQ sauce to each wrap. Then add desired amount of cheddar cheese.

Step 4: Fold the each of the sides, so they overlap slightly and then fold each end.

Seal the tinfoil around the wraps for transport. If you already are in your kitchen, skip the tinfoil.

Step 5: Place your pan on medium heat and add a teaspoon of olive oil. Lift pan by handle and with a swirling motion distribute the oil evenly to the bottom of the pan.

Step 6: Once oil is hot, place wrap with the seam/folded side down. Use spatula to press the wrap down and to flip when wrap becomes stiff and has browned slightly. Depending on the heat of the pan this could take around 10 minutes.

Step 7: For easy transport place the heated wraps back into their respective tinfoil, if not place them on a plate and enjoy!

You can also skip the oven and try microwaving the wrap (minus the tinfoil) for a really fast cook time. Feel free to experiment with different breads, cheeses, and sauces to suit the interests of your palette and your diet. You are then free to use the rest of your chicken for other recipes. Or simply heat up some instant rice/potatoes and a vegetable and you’ve got meals for a week!

I remember my freshman year oh so well. I remember feeling terrified the night before orientation. The one thing that I dreaded the most was not the new people, the new environment, or even the academic pressure. I was dreading having to talk to sorority girls about Recruitment. I remember cutting off and avoiding any Rho Gamma/Panhellenic Officer that came my way during First Week. I looked at them like they had asked me to cut my arm off whenever they asked me if I wanted to rush. To be honest, I did not even know what rush was, but I knew that I did NOT want to be a part of it. To me, it was dumb. It was a waste of money. It was a waste of my time.

And guess what? I did not rush my freshman year. I spent the first half of my freshman year isolating myself from everyone on campus. I spent all of my time in the library, and then (since I was a commuter) went back home once my work was finished.
