How To Make Amazing Chicken Enchiladas

How To Make Amazing Chicken Enchiladas

Feeling Hungry? Me too.

I've never been an amazing cook, but recently I've been looking to Pinterest for awesome, cheap, and yummy dinner ideas.


What You Need:

2 1/2 tsp butter

3 tbsp flour

1 cup milk

1/2 cup of sour cream

1 cup of chicken broth

Canned green chilies...or just dice up whatever veggies or peppers you'd like

Salt & Pepper

Diced chicken...again, however much you'd like

1 can of corn (drain first)

1 bag of cheese, whatever you prefer, to stuff the enchiladas and then another bag to spread on top of the sauce

Flour or corn tortillas


What's Next??

Put your oven on 350

Melt the butter and mix it together with your flour

Add milk and then mix together until it looks thicker and then you'll add the sour cream and the chicken broth

Now add your salt, pepper, and veggies or peppers

Place your chicken pieces and sauce into your tortillas and roll them up

Once they're in the pan you can add the rest of the sauce on top

Now top it off with your other bag of cheese

Cook for about 25 minutes, or until the chicken is completely done, and bam! Yummy enchiladas!

College is super hard. Between working, studying, and having a social life, it feels like a struggle to just keep afloat.

I understand. When you feel like your drowning and there's no way to stay afloat I understand that it feels like everyone else is doing just fine. I understand all the frustration, long nights in the library, and that feeling that you want to just throw in the towel. I understand that sometimes it's too hard to get out of bed because your brain is already filled with too much information to remember. I understand because I am also feeling pretty burnt out.

Some of the best advice I've ever received was from my social studies teacher in sophomore year of high school. He stated, "If you don't know it at midnight, you're not going to know it for the 8 a.m. exam, so get some sleep."

It's such a simple piece of advice, but it holds so much accuracy and it's something that the majority of college students need to hear and listen to. "All-nighters" are a commonality on college campuses in order to cram in studying for an exam that is typically the next day.
