To be quite honest with you, there's not much I want to celebrate about America these days. But, the Fourth of July is coming, I get a day off from work, and I'm going to enjoy a nice barbecue with lots of red, white and blue snacks (by barbecue I mean veggie burger, BTW). If you're going to be attending a barbecue, you can't show up empty handed, so I have collected the best of the best food recipes from Pinterest that are super patriotic, and vegetarian because you know what I'm about by now.

Sidenote: If you understood that Vine reference, I'm glad.

1. Coconut water popsicles

Fun fact: coconut water is very hydrating, so these are perfect to stay cool in the heat.

My birthday has never been my favorite holiday. I've found that I'm more excited to celebrate my friends' and family members' birthdays more than my own. I don't like being the center of attention, so I usually celebrate over dinner with a small group of family and friends. This way, I can enjoy myself naturally without feeling like I have to entertain everyone and make sure they are satisfied. In the past when I've had large parties, I was so nervous that people weren't perfectly content that I didn't enjoy myself at my own celebration.
