As fall rolls around, it's the perfect time to find ripe apples and make a quick and easy apple crisp. I personally love baking and I love baking even more when the recipe does not require a mixer or any difficult instructions. I first came up with this recipe when I went apple picking and was left with way too many apples that no human could possibly eat before they went bad. This is my favorite thing to eat on a cold fall day and it's even better when it's warm. Here it is, easy and basically foolproof Apple Crisp.

Apple Crisp Filling

4 medium Granny Smith Apples (peeled and diced)

1/3 cup of water

1 tbs of cornstarch

1/2cup of granulated sugar

1 tbs of ground cinnamon

Crumb Topping

8 tbs/ 1 stick of butter

1 cups of all-purpose flour

1/2 cup of light/dark brown sugar

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup of oats

Directions:

1. Pre-heat oven to 350 degrees. As you dice and peel the apples, place them in a large bowl. Once all the apples are peeled and diced, place them in a large saute pan over medium heat.

2. Put a small amount of water in the pan and cover in with a lid. Let simmer over medium heat, stirring occasionally until the apples are tender.

3. While the apples are simmering combine the 1/3 cup of water and cornstarch. Stir the cornstarch and water mixture until the cornstarch is completely dissolved. Once the apples are tender, turn the heat off and add the cornstarch mixture and stir it to combine with the apples. Once the cornstarch mixture is combined with the apples, stir in the sugar and cinnamon.

4. Place the cooked apple mixture in a 9-inch square baking dish.

5. In a medium sized bowl combine the flour, brown sugar, salt, cinnamon, and oats. Add the melted butter to the dry ingredients and stir until it crumbles. Add the crumble mixture to the top of the filling and place in the oven for 20-30 minutes or until the crumble is crisp. Let cool and serve.

Friendship. It's defined as the state of being attached to another person by feelings of affection or personal regard, but what really is friendship? Is it that occasional hallway talk with that one person who always manages to cheer you up? Is it that relationship you have with someone where they can be gone for a long period of time, but when they come back, it's like they never left? Is it spending every waking hour with someone, and knowing every detail about their life? Is it the relationship that's filled with fighting, but filled with even more resolution? I've learned that it's all of these things, and every friendship is different. It's a beautifully dysfunctional mess that should always be cherished and never be taken for granted.
