Here's a definitive list of the best pasta I've found in Italy so far.
1.) Pasta alla Carbonara. Its pasta, and cheese, and pancetta bacon, and egg yolk sauce. Its creamy and rich and so, so good.
2.) Pasta al'amatriciana. Tomato sauce, and spicy pancetta bacon, and cheese. Need I say more?
3.) Ravioli alla Aurora Sauce. Its creamy tomato sauce with spinach and ricotta ravioli.
4.) Gnocchi. Literally any kind of these pillowy pasta goodness. Four cheese or pesto or tomato sauce. Its all good.
5.) Good ole fashioned Pasta alla pomodoro. Pasta and tomato sauce. Maybe some parmesan on the side to top it off. Sometimes the simple things are the best.
