Wheat berries.
Sounds like a combination of the healthy stuff you never wanna eat and the fruit somehow always recommended in frozen form, right?
That’s what I thought until I actually tried them.
I think it’s safe to say a lot of people I know want to start eating healthier. Some want to do it to lose weight, some want to do it just so they feel better and more energized, and others do it for another reason altogether.
Personally, I also want to improve my diet. For a long time, my diet consisted of “eat whatever you feel like eating”, but I want to change that to “eat whatever you feel like eating, but eat more of the good for you stuff and eat bad for you stuff in moderation”.
For me, the hardest thing about eating healthy is finding good food that does not take millions of expensive ingredients to make. Sure, I could make matcha latte with almond milk and cookies with coconut sugar, but those things are too expensive.
That’s where I was blessed with a present from my friend - wheat berries.
I tried some when she brought it for lunch one day, and I really liked it, so she decided to give a big bag of it as a present (best present ever). I used it to make a rice bowl, except I substituted the rice with wheat berries (and as someone who eats rice every day, I found it to be more filling than rice).
It is an easy thing to pack for lunch because it does not need to be reheated at all. Plus, it has a crunchy yet soft texture I liked more than any other grain I tried! I made roasted cauliflower, broccoli, and zucchini along with some sauteed mushrooms, chicken, and yogurt cilantro sauce. Like always, I made too much, and I have plenty leftover to take for lunch for at least three days.
Wheat berries. My first toe-dip into the world of vegetables and healthy eating. Hopefully soon, I will be scuba diving in the same world.
