How To Make Chipotle At Home

Everyone has a favorite order, here is mine (PS it's vegan)!

How To Make Chipotle At Home

Have you ever wanted to make Chipotle at home? Below I have listed recipes and instructions on how to make my favorite Chipotle combo AND this version happens to be vegan! Everyone has their special order so I have also linked some great recipes for the protein and salsa options that I did not make. My order consists of the following components:

1. Cooked Rice

2. Pico de Gallo

3. Guacamole

4. Cooked Vegetables

5. Black Beans

To assemble, create a bed of rice and top with beans, veggies, pico de gallo, and guacamole (in that order)!

Cilantro Lime Rice:

1 cup brown rice

2 ¼ cups water

¼ cup olive oil

1 tsp. salt

1 tsp. apple cider vinegar

1 lime (zest and juice)

¼ cup chopped cilantro

To Prepare:

  1. Preheat your oven to 325, and grease a 9x13 inch baking dish and fill with rice
  2. Combine water, olive oil, salt and vinegar in a pot and bring to a boil
  3. Bake until all of the liquid is absorbed, about 25 minutes
  4. Take the rice out and allow to cool slightly, mix in lime juice, lime zest and cilantro

Pico de Gallo:

1 quart cherry tomatoes, quartered

¼ of a red onion, chopped finely

¼ cup cilantro

½ jalapeno (optional)

2 cloves of garlic, crushed

1 tsp. olive oil

To prepare, combine ingredients add salt and pepper to taste.

Guacamole:

For the guacamole I used the recipe that chipotle publishes on their website and the result is delicious!

Veggies:

1 green bell pepper

½ red onion

2 tsp. olive oil

¼ tsp. cayenne pepper

½ tsp. black pepper

½ tsp. salt

To prepare:

  1. Slice the pepper and onion lengthwise into long slices, drizzle with half the olive oil, add salt, and both cayenne and black pepper, mix together so that the vegetables are well coated in seasoning
  2. Heat the remaining olive oil in a pan
  3. Sautee the vegetables until tender, about 10-12 minutes



Black Beans:

1 16oz. can of black beans

¼ red onion, chopped

1 tsp. cilantro, finely chopped

2 cloves of garlic, crushed

1 tsp. olive oil

Salt to taste

To prepare:

  1. In a saucepan, heat the olive oil and add onions. Sautee for 2 minutes, add garlic and continue cooking on low heat for 5 minutes
  2. Add beans and simmer for 5 minutes
  3. Garnish with cilantro

I remember my freshman year oh so well. I remember feeling terrified the night before orientation. The one thing that I dreaded the most was not the new people, the new environment, or even the academic pressure. I was dreading having to talk to sorority girls about Recruitment. I remember cutting off and avoiding any Rho Gamma/Panhellenic Officer that came my way during First Week. I looked at them like they had asked me to cut my arm off whenever they asked me if I wanted to rush. To be honest, I did not even know what rush was, but I knew that I did NOT want to be a part of it. To me, it was dumb. It was a waste of money. It was a waste of my time.

And guess what? I did not rush my freshman year. I spent the first half of my freshman year isolating myself from everyone on campus. I spent all of my time in the library, and then (since I was a commuter) went back home once my work was finished.
