Lunch is the meal that many people often overlook. This might be because lunch food has the stereotype of being boring and bland and most people don't have the time to make a lunch in the middle of the day.
For me, there are three components I look for in any recipe, especially a lunch recipe. First it has to be quick, second it has to be healthy, and lastly, it has to be delicious. If a recipe has these three things then it passes my recipe test.
This recipe below passes the test for me by having all three of these components. Loaded sweet potatoes are healthy, quick, and delicious. These sweet potatoes are loaded with, spinach, avocado, chickpeas, and sprinkled with feta cheese.
All of these foods are healthy and all you have to do is throw everything into the sweet potato and enjoy, it's seriously that simple and even more delicious!
Recipe:
Ingredients:
1/2 Sweet Potato
1/2 Avocado
Handful of Spinach
Sprinkle of Feta
Cilantro
Lemon/Lime
Salt/Pepper
Directions:
1) Preheat oven to 400 F
2) Put the sweet potatoes on a sheet pan and bake for about 35 to 40 minutes. Then let them cool before slicing. (baking the sweet potatoes does take a little longer, I suggest prepping a few on a Sunday, so you have the week to use them)
3) Rinse and drain 1 can of chickpeas, and spread them onto a baking sheet. Season with olive oil, salt, pepper, and paprika. Bake for 15 mins (I also advise doing this step in advance/you don't have to roast your chickpeas, but it adds for an extra delicious crunch)
4) Add spinach (you can sauté it if you want!), sliced avocado, crispy chickpeas, sprinkle feta cheese, garnish with cilantro, and add lemon & lime, salt & pepper all to taste!
4) Enjoy!
