Here are some of my favorite salads that forgo lettuce for tastier ingredients! What is a salad but just a bunch of food chopped up and mixed together. Plus, all these salads just happen to be...vegan. Salads don't have to consist of giant pieces of iceberg lettuce. Instead they can be filled with fresh veggies and delicious mix ins without a single leaf of lettuce to be found.

1. Corn, Black Bean, Avocado, and Tomato Salad


This salad was so freaking good. Like it doesn't even feel like you're eating a salad! Find versions of this easy to make recipe here and here.

2. Pasta Salad

I know, pasta salad seems like a stretch on what a salad should be, but a good pasta salad can hide a LOT of veggies. I love artichoke hearts, tomatoes, cucumbers, onions, and peppers in mine. Plus you can pick some of those cool shaped noodles! Find some inspiration here.

3. Chickpea Salad


Chickpeas are known for their crucial role in hummus, but these protein packed beans are also great in salads. Growing up my mom always threw em in our dinner salads, but now as a lazy adult, I often just throw half a can in with some tomatoes and call it a meal. Recipe for the salad above can be found here.

4. Voodles Salad

Is it Voodles? Or Zoodles? Or just Veggie Noodles? I don't know, but if you're feeling fancy, they can be a great way to make a salad to impress your dinner guests. You can find out how to make this delicious salad here.

5. Quinoa Salads

Quinoa makes a great base for a salad. This protein-packed super food can be dressed up in various ways. Plus if you make quinoa to go with your dinner, use the leftovers to toss together a salad. 2 birds, 1 giant thing of quinoa. See what tasty stuff they put in the bowl above here.
