So, I don’t know about you, but I always have leftovers in my fridge. I always have Leftover chicken with nothing to make it with, leftover veggies (when my mom comes), and leftover EVERYTHING. The other night I was inspired by the things in my fridge, which led me to writing this article about how to put your leftovers to good use.
Kitchen Sink Soup
This one is inspired by my mom. Whenever we had a full week of cooking, with numerous dishes, she made kitchen sink soup at the end of the week. Which means, she threw everything into a pot with chicken broth and called it a day. And it was always AWESOME. Potato’s, peas, chicken, pulled pork, noodles, you name it. Delicious.
Stir Fry
This is the dish that inspired this article. I had some leftover chicken and chopped potatoes, so I threw those in a pan with some peppers, squash and zucchini, (yes, this meal was even HEALTHY) and it was delicious.
Quesadillas
This one is easy, tortilla, cheese, and whatever meat and veggies you have sitting in your fridge. Boom, done.
Salad
Okay, hear me out. Spinach and lettuce go bad so quickly. So, my solution, put them in a bowl, add chicken, (can you pick up on how much I like chicken?) cheese of your choice, veggies of your choice, and even some nuts. Amazing.
Chicken Fried Rice
I always get the microwavable rice’s and make chicken, so why not put them together with some egg, veggies, and even shrimp or beef of you are feeling risky. Delicious.
Garlic Bread
My roommates LOVE THIS and so does everyone in the world obviously because its wonderful. All you need is a loaf of bread. If you have leftover sandwich bread, okay. If you have a new loaf, okay. 3 easy ingredients: butter, garlic powder or garlic salt, and parmesan cheese. Broil for literally 2 minutes and its ready and so good now I’m craving it.
Guacamole
This is something everybody loves but also never wants to make even though its so simple. Avocados go bad quick if you cant eat them fast, so why not use two and add tomatoes, onions, and salt, and have a taco night? It is so simple and something everybody loves.
Peach Cobbler
If you are a peach person, and have some leftover, this is super easy (cc: the Tasty video). You just add peaches, sugar, and even dough if you are feeling extra and you’re done. This is so good my roommate made it once and I am going to tell her to make it again.
Arugula Toast
This one is my favorite so I saved it for last. I always always have goat cheese on deck, and also love Arugula (thank you Michelle for introducing me to it.) So, I toast one piece of bread, use the goat cheese like a spread, and then add arugula and tomatoes (and anything else you want), and its so good I am going to go make it right now.
