Summer is almost here and that means summer foods.
Cooking is one thing I love to do because I love taking a bunch of foods and spices and making a meal from it.
Lately, the weather has been hot with warm breezes and lots of sunshine (oh I love it)! And with the weather feeling like I am at the beach, I am drawn to make a vacation meal - chili lime steak fajitas.
These were oh-so-easy, everyone loved them and it only took about 45 minutes to do everything.

Chili Lime Steak Fajitas
What You'll Need:
- 2 and 1/2 pounds of steak (I used a rump)
- 3 multi-colored bell peppers
- 1 onion
- 1/3 cup of lime juice
- 2 tablespoons of oil
- 3/4 tablespoon of chili flakes
- 3/4 tablespoon of basil
- 1 teaspoon of garlic salt or powder
- 1 teaspoon of salt
- 1 teaspoon of brown sugar
- 1/2 teaspoon of chili powder
- flour tortillas
- sour cream
- avocado
How-To:
- Cut steak into strips
- Whisk together lime juice, oil, chili flakes, basil, garlic salt or powder, salt, brown sugar and chili powder to make the marinade in a shallow bowl.- Pour half of the marinade over the steak and let sit for one to two hours at room temperature. If you don't have time to wait, 10-15 minutes will do because there is so much flavor!
- While the steak is marinading, wash and cut the bell peppers and onions into strips.
- Heat one teaspoon of oil in pan and grill the steaks. I made mine medium. Set steak aside with foil covering it.
- Add another teaspoon of oil to the pan and add peppers and onions. Pour the other half of marinade over veggies and cook to your liking.
- Serve with warm tortilla shells, sour cream and avocado or topping of your choice!
