Homemade Pumpkin Seed And Walnut Granola

Everyone loves Granola.

You can put it in yogurt, or eat it as cereal, or simply throw it in a container to snack on throughout the day.

Granola is also unnecessarily expensive. I went so long living without it because the good stuff costs seven to nine dollars (and sometimes more) per pound, and despite the fact that it's marketed as a health food, most granola is high in fat, sugar, and calories.

So, finally, I decided I was going to make my own granola. It would have the exact ingredients I liked, without unhealthy additives.

I hav this habit of looking up recipes on pinterest, but never actually following them. I'll browse 2-3 different recipes and kinda merge them all together. Or, I'll glance at the recipe once, and kinda play a guessing game trying to remember the important parts.

Today I decided less is more. I literally put 5 ingredients together and called it granola.

Oats, pumpkin seeds, walnuts, chia seeds and honey.

A 10 year old could literally make this. And they could probably afford it too!

I got the Oats for 99 cents a pound at dillons, and the pumpkin seeds were on sale for 4.99 a pound. The walnuts were a little more pricey, I think around 7.99 a pund, but any of your favorite nuts or seeds can be substituted!

After all of the dry ingredients are in the bowl, simply add honey until it begins to stick together. If you'd like to try out some other flavors, maple syrup or brown rice syrup are great ways to mix it up.

Next, spread the mixture onto a non-stick pan and sprinkle your favorite spices on top. My favorite go-to spice combonation is cinnamon, nutmeg, and allspice. If you don't have a non-stick pan, you may want to coat the bottom with oil or use parchment paper to prevent the granola from sticking.

Pop this into your convection oven or conventional oven at 300 degrees for about 10 minutes. When your timer goes off, take out the granola, mix it around and bake for another 10 minutes.

WARNING: This recipe is very easy to over-cook so keep your eye on it the whole time. When the granola first comes out of the oven, it may feel undercooked, but after you let it cool it will harden nicely and have a nice crunch.

For this batch I used:

2 cups of old fasioned rolled oats
1/2 cup pumpkin seeds
1/2 cup of walnuts
2 TBS of Chia Seeds
Honey to taste
2 TSP Cinnamon
1 TSP Nutmeg
1TSP Allspice

This is the perfect fall recipe to say hello to October! My favorite way to enjoy this granola is on top of non-dairy coconut yogurt, sprinkled with chocolate chips and chunks of banana. Oh! And I can't forget to pair that with my morning cup of coffee.

If you do happen to make this, let me know how it goes in the comments below! I'd love to hear what you add to make it your own!

College is a crazy, beautiful, amazing whirlwind. It is highly popularized in television and movies, but not necessarily in the most accurate way. Yes, there's frats, dingy dorms, raging house parties—but there's also a lot that people fail to mention.

1. If you thought that you knew how to study, you're wrong.

All of your classes aren't taught every day, so professors aren't on your case constantly about reading and memorizing material. Once you get back that "questionable" first exam grade, you'll kick it into high gear and figure out what works for you

Girl With Bleached Hair
Tumblr

I've been a bleach blonde for over a year now, and let me tell you, it is a lifestyle. More hair appointments, longer showers, and special shampoo. But it is totally worth it!

1. Mentally preparing yourself to convince your hair dresser that white is the way to go.

2. Or the anxiety of what could go wrong by bleaching your hair at home.

3. You could either become a ginger

4. Or a pixie

5. The face you make in the mirror when you take off your towel to unveil the perfect white strands.

6. Taking a million selfies the day you bleached it, because you know your roots will be back in literally 2 days.

7. Having to get bangs or a big chop because your hair is so damaged.

8. Having orange highlights in between touch-ups.

9. Going out for a drink afterwards to debut your updated look.

Despite the struggles, you love your platinum blonde hair! You make sure Instagram knows it, too. You don't need a filter, because the color is flawless by itself!

Finals: just thinking about them gives you anxiety. Only two weeks separate you from summer, but they're the longest of the semester. There's a familiarity to this season, now that you have had so many testing cycles under your belt. But that doesn't quell the ever present stress to pass your finals and your classes. Even better, as a package deal during these wonderful weeks, you get to wake up early to study and you get to take exams that can begin anytime from 7 A.M. to 7 P.M. I've been at this college thing for almost three and a half years, and while I thought that high school was truly the lowest point of my existence, I'm beginning to realize that it was a walk in the park. Like, I miss the days when the biggest white lie I told my parents was my made up excuse about being late for fourth period. These days, the white lies are a tad more complex, and as ashamed as I am to admit it, I've definitely told a few of these.
