Traditions are my favorite thing about Christmas. Not just the traditions on Christmas Day, but the ones leading up to it. I’m writing this article on December 11th, 2016, while baking homemade pumpkin cookies at one of my closest friend’s house. It’s become our tradition to spend an afternoon baking the same cookies each year. This is our fourth year in this tradition and no cookie has ever come close to how good these homemade pumpkins ones are.
Homemade Pumpkin Cookie Recipe
What you need:
- 1 cup (2 sticks) butter
- ½ cup brown sugar
- ½ cup white sugar
- 1 egg
- 1 ½ tsp vanilla extract
- 1 cup canned or fresh pumpkin
- 2 cups flour
- 1 tsp baking soda
- ½ tsp nutmeg
- ½ tsp ground cloves
- ½ tsp ginger
- ½ tsp salt
- 1 tbs ground cinnamon
Step 1: Heat oven to 350 degrees Fahrenheit
Step 2: In a large bowl, beat butter, brown sugar, and brown sugar until smooth. Add the egg, vanilla extract, and canned or fresh pumpkin and beat again.
Step 3: In another, medium sized bowl, stir together flour, baking soda, nutmeg, cloves, ginger, salt, and cinnamon.
Step 4: Pour the contents of the medium sized bowl into the larger bowl and stir with a spoon until smooth.
Step 5: Place cookies on a lightly grease cookie sheet about 2 inches apart.
Step 6: Bake for about 8-11 minutes depending on size.
