Over Thanksgiving break this year I became very bored with the lack of tests, quizzes and other assignments that take the majority of my time at school. So, I decided to try something new. I have always loved baking but not cooking and baking from scratch is not something that anyone in my immediate family is overly thrilled to do.
I love the idea of knowing exactly what you're putting into a product instead of just using a bag and adding a couple of things. This all what sparked my interest to search for a recipe that sounded good for my picky taste buds as well as the fact that it is homemade.

After using the original recipe serval times I have made some adjustments that I think are necessary and beneficial for the final bread loaf. My first alteration would be to adjust the amount of vanilla from the first section from 1/2 teaspoon to 3/4 teaspoon to help add a subtle flavor to the bread itself, you'll see why in just a minute.
I recommend fresh blueberries for this recipe since everything else is scratch, there's no point in ruining great bread with mediocre blueberries. I also add about 1/4 cup of blueberries because I personally love them and think there could never be enough.
The suggested cook time on the original recipe is only 55-65 minutes, and every time I used those guides, my bread was dough in the middle so I would suggest 70-75 minutes.
My only other adjustments would be for the "Lemon glaze", after adding so much lemon to the bread, the glaze doesn't need to be lemon. When it's just a simple glaze it helps offset the tartness of the lemon and really rounds out the bread.
This recipe is fun to make, you'll come out feeling like the next Master Chef, and everyone will die for it and beg for the recipe. You can also add in other types of compatible fruits such as strawberries to make a strawberry lemon bread. This recipe is great for not just the holidays but year round!
