I feel like I just struck gold. These brownies (or “blondies” if you like) taste like fudgy, decadent, sins in your mouth, but get this, they’re made out of garbanzo beans. I really wasn’t sure how these would turn out, I’ve tried my share of “vegan” or “paleo” versions of recipes that claim to be just like the original (if not better), just to be sadly disappointed. But these bad boys surpassed my expectations.
I’ve been researching on Pinterest for the past week trying to figure out how I can take grains out of my diet without starving. I’ve said it before, and I’ll say it again: Pinterest is a magical place where you can find every recipe under the sun. And I’ve saved a lot of grain-free recipes on my board, *Special* Food if you’re curious about trying a grain-free diet. All that to say, this recipe is grain-free, gluten-free, vegan, and correct me if I’m wrong, but I think they’re actually healthy too. Oh, and super easy. Blend up all the ingredients (minus the chocolate), stir in chocolate chips, pour into the pan, and bake for an hour. That’s it.
