One of the hardest things about being fit and being busy is feeding yourself on the go. I mean other than pizza, mac and cheese, or any other combination of carbs and cheese that come all too easily. The real challenge is learning how to make things for yourself that are good for you, and easy.
My mom is a healthy eater, we got rid of pop-tarts and fruit by the foot right when I got to middle school. I know what is good and what isn’t but still, freedom can make you a little crazy. So for me, the real challenge is how to buy food logically. I found myself buying too much food, food I couldn’t keep up with. My worst enemy= bananas. I would buy five on Monday and by Saturday there were always 2 sad brown ones. With that, I went to the Holy Grail, also known as Pinterest and typed in ‘2 banana recipes’
What I found was this:
Based on what I had around, my recipe went like this:
- 1 cup(ish) crunchy PB
-2 large eggs
-2(ish) bananas, some parts were so brown I couldn’t even
-½ teaspoon baking soda
-splash of vanilla (why limit the best part to just a teaspoon?)
- 2 tablespoons of honey
-TONS of chocolate chips
-½ teaspoon of vinegar
Then, I put them in the 400 degree oven and cooked them for about 15 minutes. The recipe says 8 minutes, but after 8 minutes they were pure sludge still, so no.
And the finished product: SO GOOD AND PERFECT!
