Peanut Butter Banana Wraps

Ingredients:

- 1/2 cup peanut butter, creamy or chunky

- 4 bananas, ripe

- 4 tortillas, 8"

Steps:

1. Place 2 Tbsp of peanut butter into the center of each tortilla and spread evenly, leaving a 1" border all the way around.

2, Peel a banana and gently straighten the banana to remove the bend. Place banana directly into the center of tortilla on top of the peanut butter.

3. Wrap one side of the tortilla over the banana, pressing gently to secure the peanut butter to the banana then roll. The peanut butter will secure the tortilla to the banana.

Cinnamon, Butter, & Brown Sugar Carrots

Ingredients:

- 8 Large Carrots

- 3 Tablespoons Packed Brown Sugar

- 4 Tablespoons Butter

- 2 Tablespoons Water

- 1 Teaspoon Salt

- 2 Teaspoons Ground Cinnamon (or more)

Steps:

1. Peel carrots and cut into long thin strips. Set aside.

2. Combine brown sugar, butter, water, salt and cinnamon in a large casserole dish.

3. Microwave on high until butter is melted (about one minute).

4. Stir to blend.

5. Add carrots and stir until coated.

6. Cover and microwave on high for 8 minutes.

7. Stir again to blend.

8. Microwave another 4-8 minutes (depending on the thickness of carrot pieces); check tenderness; add additional cooking time until desired tenderness.

Quick Ramen Bowl

- 1 Package of Ramen Noodles

-1 Cup of Fresh Spinach

- 3 Medium Button Mushrooms

- 2 Whole Green Onions

- 1 Large Egg (optional)

- 1 Teaspoon Chili Garlic Paste (optional)

1. In a small pot, bring 2 cups of water to a boil. While you are waiting for the water to boil, wash and slice your veggies. Once the water is boiling, add the dry noodles and cook according to the package directions (boil about 5 minutes). Add the seasoning packet (or half a packet if you prefer less sodium) and stir until dissolved.

2. Turn the heat down to medium and stir in all of your fresh veggies. Allow them to sit in the hot (not boiling) broth for 1-2 minutes or until slightly softened.

3. Make a well in the center of the pot and crack the egg into it. Allow the egg to poach in the broth until the whites are solid but the yolk is still runny. Alternatively, you can break the yolk and stir the pot just slightly to yield egg ribbons like in egg drop soup. The water should not be boiling at this point or else your egg will dissolve into such small pieces that it will just give you a cloudy broth.

4. Pour the soup into a bowl and serve with a dollop of chili garlic paste on the side.

Pizza Quesadilla

Ingredients:

- 2 Flour Tortillas, small size

- Handful of Pepperoni

- 1 cup shredded cheese, Italian blend

- 1/2 cup shredded Parmesan cheese

- 1/2 cup pizza or spaghetti sauce

Steps:

1. Assemble quesadilla (tortilla, 1/2 of the cheese, pepperoni, tortilla on top)

2. Cook in a microwave.

2a. Cook quesadilla until cheese is melted.

3. Remove quesadilla from microwave, add remaining cheese & crispy pepperoni to the top of the quesadilla, microwave until cheese on top is melted.

4. Cut into pieces

Indian Red Beans Over Rice

Ingredients:

- 1/2 cup canned small red beans, rinsed and drained

- 2 tablespoons finely chopped red onions

- 2 tablespoons finely chopped red bell peppers

- 2 teaspoons finely chopped fresh cilantro or flat-leaf parsley leaves

- 1 teaspoon fresh lime juice

- 1 teaspoon tomato paste

- 1/2 teaspoon honey

- 1/4 teaspoon garam masala

- 1/4 teaspoon kosher salt

- 1/2 cup cooked brown rice (short or long grain)

Steps:

1. Mix together the beans, onions, bell peppers, herbs, lime juice, tomato paste, honey, garam masala, and salt in a small bowl. Pour into a 12-oz. mug.

2. Cover and microwave until hot, about 2 minutes. Serve over the rice.
