Looking for some easy and healthy recipes to cook at school? I promise it’s possible. All it takes is a Crockpot and a few trips to the grocery store. It takes a little bit more effort than a quick run to the dining hall, but if you’re craving a home cooked meal, it’s definitely worth it.
Crockpot Chicken Chili
This requires the following:
- 2-3 chicken breasts (if your Crockpot can hold more, feel free to add as many as it can hold; however, be sure to adjust the other ingredients accordingly)
- 2 cans Chili Rotel
- 1 can refried beans
- 1 can corn
This is one of my favorite dishes that I cook in the Crockpot!
Pro-tip: Top the chili once cooked with sour cream and cheddar cheese!
Slow Cooker Chicken and Dumplings
This requires the following:
- 2-3 boneless, skinless chicken breasts
- 1 tablespoon of butter
- 1 can chicken broth
- ½ onion, finely diced (frozen will work fine)
- 1 (10 oz) refrigerated biscuit dough
Place chicken (sprinkle with salt and pepper), butter, onion, and soup, in a slow cooker; pour chicken broth on top.
Cover and cook for five to six hours on high, or all day (eight to nine hours) on low.
Before serving, rip biscuit dough into smaller strips. Place strips into the slow cooker and cook until no longer raw in the center. This usually takes about thirty to forty minutes.
This sounds like a lot of work but is really not too bad and is so worth it!
Meatballs
This requires the following:
- Frozen meatballs
- Tomato sauce
Place meatballs and tomato sauce in slow cooker, cook on high for three to four hours; cook on low for an excess of four hours.
This is an extremely easy recipe but tastes delicious!
Veggie Lasagna
This requires the following
- Assorted Veggies (of your choosing, to replace meat)
- Tomato sauce
- Ricotta cheese
- Mozzarella cheese (Shredded)
- Lasagna noodles
Spray the crockpot with nonstick cooking spray. Spread ½ cup of tomato sauce to the bottom. Break the lasagna noodles so that they fit and cover the bottom as well as possible. Cover the noodles with about 1/3 of the ricotta, veggies, sauce, mozzarella cheese, and end with noodles. Repeat the layers two more times for a total of three layers. Layer the noodles on top with a thin layer of sauce and shredded cheese on top. Cover the crockpot and cook on high for three hours or on low for five to six hours. Turn the crockpot off and let it sit for at least an hour.
This is a lot easier to do if you live in an apartment, I would not recommend it for those who live in a dorm.
