Here in the United States, our widely known and loved food trucks have been around for as long as we can remember. As early as 1691, New Amsterdam, (now known as New York City) passed regulations that allowed street vendors to sell assorted foods from push carts. In 1866, Charles Goodnight developed the "Chuck Wagon," which was designed to feed cattlemen journeying across the Old West. Over the years, food trucks have become more popular as well as more specialized. Today, there are different food trucks for just about any type of food you could imagine; King of Pops, Southern Cake Queen's Mobile Cupcakery, and Papi Queso being among some of Charlotte's most popular.

If you live in Charlotte or plan to visit the area this summer, I would highly suggest stopping by "Food Truck Friday" at the corner of Camden Road and Park Avenue in South End. Every Friday evening from 5 p.m.-9 p.m. anywhere from eight to fifteen food trucks line this intersection and offer Charlottean's a fun-filled night of both delicious and unique dinner options. The trucks vary from week to week, so you will never run out of options!

The combination of purchasing different foods from a food truck and the established sense of community have turned food trucks into an ever-growing phenomenon!

Raising the minimum wage to a livable wage would not only benefit workers and their families, it would also have positive impacts on the economy and society. Studies have shown that by increasing the minimum wage, poverty and inequality can be reduced by enabling workers to meet their basic needs and reducing income disparities.

I come from a low-income family. A family, like many others in the United States, which has lived paycheck to paycheck. My family and other families in my community have been trying to make ends meet by living on the minimum wage. We are proof that it doesn't work.

Between the piles of homework, the hours of studying and the painfully long lectures, the desire to dropout is something that is constantly weighing on each and every one of us, but the glimmer of hope at the end of the tunnel helps to keep us motivated.
