My First Meal Prep

Yesterday I successfully completed my first meal prep! I have been telling myself I need to meal prep for about a week now, and I finally made myself buckle down and do it! I made two separate meals which gives me enough food to have lunch and dinner for a whole week! I should have been doing this a while ago because a total of ten meals cost me $33.00! That is less than $4.00 a meal, who knew!

Chicken Burrito Bowls

I saw this recipe on one of the Facebook videos and it looked amazing! It was really simple and I actually liked all of the ingredients, so I had to try! The recipe is:

INGREDIENTS:

2-3 Boneless skinless chicken breasts

3 Bell Peppers, any color, sliced

1 Large red onion, sliced

2 Tablespoons olive oil

1 Tablespoon Taco Seasoning

Salt and Pepper

1 Jar salsa

3 Cups cooked brown rice, divided

1 Can black beans, drained and rinsed

1 Can corn

1 Cup shredded cheddar cheese

1 Lime, sliced into wedges

PREPARATION:

  1. Preheat oven to 400 Degrees
  2. Line a baking sheet with foil
  3. Place the chicken, peppers, and onions onto the baking sheet and drizzle with oi.
  4. Sprinkle the taco seasoning evenly over both sides of the chicken breasts.
  5. Salt and pepper the peppers and onions, tossing to coat.
  6. Top each chicken breast with a generous poor of salsa.
  7. Bake in preheated oven for 25 minutes.
  8. Rest chicken for 10 minutes before slicing into strips.
  9. Add a base of brown rise to 4 food storage containers. Top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked peppers and onions, and sliced chicken. Garnish with a lime wedge.
  10. Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days.
  11. Meal-prep FTW! Enjoy!

Trust me, it’s easy and delicious!!!

Chicken Salad

INGREDIENTS:

2 Cups chicken cut into cubes

1 Cup of mayo

1 Tablespoon Dijon mustard

Fresh Dill to taste

1 Tablespoon Lemon juice

5 Stalks of celery cut into cubes

3 Stalks of Green Onions

PREPARATION

  1. Gather all ingredients and place into a bowl.
  2. Stir together and refrigerate.

These are some of the easiest meals I have ever made and they give you enough food to make 10 meals total! So there are your meals for the week!

If you haven’t tried meal prep, I definitely recommend you start!
