Here are a few interesting summer dishes you will want to try cooking.

Summer is a time when everyone wants to feel more confident and healthy in their body. Many of us even have a little extra time to cook some delicious dinners. If you are running out of ideas, I have a few here that may spark your interest! Many of them are healthy options as well, providing more incentive to give them a try.

Pad Thai.


Rice noodles with shrimp, garlic, peppers, and eggs.


Grilled chicken breast.


Lemon-grilled chicken with mango chile salsa.


Fish tacos with Baja sauce.


Add some avocado, cilantro and lime. Try it with hard-shell, too!


Power salad.


Made with fresh baby spinach, blueberries, tomatoes, avocados and poppy seeds.


Salmon burger


Grilled salmon with lettuce, sliced tomato and onions.


Quinoa wraps


Whole-grain wheat tortilla with quinoa, black beans, avocado and baby spinach.


Honey-chicken kabobs with roasted veggies.

Make this delicious by marinating overnight! Include roasted squash, peppers and potatoes.


Tomato-basil soup.


With dried red pepper and fresh basil leaves, it has the perfect taste.


Chicken and veggie tostada.

Add black beans, mild fresh tomato salsa, avocado and low-fat mozzarella.


Asiago prosciutto pasta.

Bits of prosciutto with summer squash, cherry tomatoes, parsley and asiago cheese.

As people ages 18-22, we’re just trying to figure out what we’re doing with our lives, our careers, our eating habits, exercise routines, sleep patterns, and other necessities for adult life. We definitely don’t take proper care of ourselves; it’s basically impossible when we have essays, tests and readings due and somehow we’re supposed to eat right, exercise and sleep.
