If you're anything like me, you know better than to step into the kitchen, because it's pretty much guaranteed that you will burn something up. I promise there are a few meals that even the worst cooks can manage to make after a late night at the library. These ten meals are the best (maybe not the healthiest) options for you!
1. Grilled Chicken Cobb Salad
Easy. Before you do anything, be sure to hard-boil an egg. Buy a bag of frozen Tyson chicken tenderloins, slice one up, preheat one of those little grills, lay some olive oil on it and let it cook. You can even throw on some spices if you're feeling fancy. While you're waiting for that to finish up, slice some avocado and tomatoes, wash some lettuce and throw it in a bowl. Top it off with chicken and whatever dressing you prefer, along with a few croutons and Parmesan cheese and you are good to go!
2. Spaghetti
OK, everyone knows how to make this, come on. Boil some water, throw some noodles in, and when its ready take it out, throw some butter and Prego on it with some parmesan cheese (and please don't ever forget your breadstick). If you're feeling extra healthy and don't just want some veggies on the side, make it a zucchini noodle spaghetti.
3. Turkey panini
Take some real whole grain bread and press some sliced turkey, swiss cheese and some sliced tomato.
4. Omelettes
Ok no judgement. These things can pack a lot of your vegetables and protein so definitely skip the bagel and pack some eggs with peppers before class.
5. Healthy flatbread pizza
THIS IS DELICIOUS. Go to your local grocery store and buy the whole grain, healthiest, flatbread crust you can find. Slab some olive oil, mixed cheeses, mushrooms, peppers, tomatoes and maybe a handful of pepperonis and bake that baby until it's nice and crisp. Eat one half with a cup of fruit salad and save the rest for a lunch break.
6. AND OF COURSE the good old trusty go-to's
PB&J, Grilled Cheese and Ramen. Put your own twist on these and you will definitely make it through (at least your freshman year of) college.
Obviously, if you're ever in a rut, a lean cuisine will never let you down, but when I first started learning to feed myself, these were my go to's. Growing up with a mother who cooked every night was definitely a blessing, but certainly did not prepare me for getting back late at night after work/class/etc. and still having to feed myself.
