Living off-campus can be difficult in college, especially since we’re oftentimes too busy to cook a decent meal for ourselves. We fall into the trap of thinking we don’t have enough time to come home and cook since we leave early for classes, and come back late in the evening. While eating out is tempting, here are some simple meals you can make and conveniently take on the go for a quick meal during the day.

1. Lettuce wraps

This is a simple way to eat healthy and make use of some leftovers in the fridge. This low-calorie option is perfect for when you want to have a meal that’s easy to store in your bag. Try putting ground chicken/beef, beans, chickpeas, and other protein-rich foods inside the lettuce cups for a satisfying, protein-packed meal!

Here’s a five-ingredient recipe that you can whip up in no time!

2. “Eggocado”

This filling yet small snack is perfect for those of us who don’t want to carry too much. Just spoon out some avocado, crack an egg inside it, and season/bake it in the oven for a few minutes.

Learn how to make the trendy Eggocado here.

3. Pasta

An old classic. Try with pesto, marinara sauce, cheese, and other sauces to change things up from time to time.

Choose from these 21 quick and easy pasta recipe ideas.

4. Salads

Like pasta, this meal is a staple for college students. Just pack some greens and dressing into some Tupperware (or even a plastic bag), and voila!

5. Tacos

Like the lettuce cups, this is a great way to use up some leftovers in the fridge. Use ground meat or beans on a tortilla and complement it with some sour cream (or Greek yogurt for a healthier option), cheese, tomatoes, lettuce, and cilantro. These are small enough to take on the go, but filling enough to make a satisfying lunch!

Learn how to make it here.

6. Stir-fry

This is one of the simplest and most satisfying meals that any college student can whip together. Just get some meat (or meat substitute), and vegetables and toss them together with some olive oil in the pan. Complement it with some spices and rice on the side, and you’re ready for a meal that will keep you full all through class!

If you don't know where to start, check out these 58 recipes Delish put together on their site.

7. Muffin -Tin Egg Cups

Need an on-the-go breakfast? Before your morning shower, chop up some vegetables into a muffin tin and pour some scrambled eggs inside each cup. Bake in the oven for 15 minutes, and pack your fresh egg cups into your bag for a filling breakfast or snack option.

Taylor Swift in orange dress playing a moss-covered piano on stage with bright lights.

A three-and-a-half-hour runtime. Nine Eras. Eleven outfit changes. Three surprise songs. Zero breaks. One unforgettable evening. In the past century, no other performer has put on an electric performance quite like Taylor Swift, surpassing her fans ‘wildest dreams’. It is the reason supporters keep coming back to her shows each year. Days later, I’m still in awe of the spectacle ‘Miss Americana’ puts on every few days in a new city. And, like one of Taylor’s exes, has me smiling as I reminisce about the memories of the night we spent together.

Today I started my third week of college at Minnesota State Moorhead. I have survived welcome week, finding my classes on the first day, and being an awkward loner in the dining hall. Even though I have yet to be here for a month, I have already experienced many thoughts and problems that only a new college student can relate to.

In college, one of the essential things to have is friends. Yes, textbooks, a laptop, and other school supplies are important but friends are essential. Friends are that support system everybody needs. The more friends you have the better the support system you have. But you also have someone to share experiences with. And don’t settle for just one or two friends because 8 out of 10 times they are busy and you are studying all alone. Or they have other friend groups that do not include you. Don’t settle for just one or two friends; make as many friends as you can. After the first couple of weeks of college, most friend groups are set and you may be without friends.
