Living off-campus can be difficult in college, especially since we’re oftentimes too busy to cook a decent meal for ourselves. We fall into the trap of thinking we don’t have enough time to come home and cook since we leave early for classes, and come back late in the evening. While eating out is tempting, here are some simple meals you can make and conveniently take on the go for a quick meal during the day.

1. Lettuce wraps

This is a simple way to eat healthy and make use of some leftovers in the fridge. This low-calorie option is perfect for when you want to have a meal that’s easy to store in your bag. Try putting ground chicken/beef, beans, chickpeas, and other protein-rich foods inside the lettuce cups for a satisfying, protein-packed meal!

2. “Eggocado”

This filling yet small snack is perfect for those of us who don’t want to carry too much. Just spoon out some avocado, crack an egg inside it, and season/bake it in the oven for a few minutes.
