Sometimes you just want a pick-me-up. Sometimes you just want to make your own food and you want it to be healthy. Sometimes you're tired of walking to the dining hall three freaking times a day only to be offered the same unhealthy meal options they had yesterday.
When I lived on campus, it always felt so inconvenient to cook and buy groceries. Luckily, I learned a few tricks after months of suffering through the same dining hall food day after day. I'm going to provide those students who want to cook cheap, healthy, easy meals with a few of those meals. All you need for these meals is a crockpot and the ingredients!
If you do not have a crock pot, I suggest you get one now! They make cooking delicious, healthy meals a breeze. I have a small sized crock pot from Target, but you can also get them from Bed Bath & Beyond, Walmart, and Amazon. Crock pots start around $20 and go up from there.
3-Ingredient Taco Chicken
This recipe calls for 2 pounds of of boneless chicken breasts, 1 teaspoon of taco seasoning (of your choice) and 1 cup of mild salsa. When serving you will also need tortillas or taco shells and whatever toppings you like. The less the cheaper! In a crock pot it cooks in 3-4 hours on low and 2 hours on high.

3-Ingredient Lemon Garlic Chicken
This recipe is a personal favorite! The ingredients include: 4 lemons, 2-3 heads of garlic and 4-5 pounds of chicken. My suggestion with this recipe is to add some of your own seasonings to the chicken such as salt, pepper, steak seasoning or any of your favorite herbs. It makes so much food so you can have leftovers for a few days.

4-Ingredient Mexican Soup
The ingredients of this recipe consist of 1.5 pounds of chicken, 15.5 ounces of salsa (of your choosing), 15 ounces of low-sodium chicken broth and 8 ounces of skim milk Monterey or pepper jack cheese. This one will cook in 6-8 hours on low or 3-4 hours on high in a crockpot.

3-Ingredient Chili
This one is a little different from the other recipes. The difference is that you will need to cook and brown the ground beef before it is added to the crockpot. The ingredients for this recipe are 1 pound of cooked ground beef, 1 can of chili beans of your choice, and 1 can of seasoned diced tomato sauce for chili. It will take 4-6 hours to cook on low in the crockpot. The website offers a way to make it on the stove in 30 minutes!
