The holidays is a miraculous time. It is a time for Christmas caroling, sledding, big family get-togethers...and stressful holiday gifts. Finding the perfect gift can be a ton of stress that you don't need around the holidays. But finding the perfect gift for the perfect price is almost impossible. My mom and I have made these mints the past few years for our neighbors and relatives and they have always been a huge success. This is not the original recipe that we used, but it is almost identical. They are easy and fun to make, and are super delicious! We added a few drops of green food coloring to ours as well to make them a little more festive, but you could add any color according to your preference. After they were made, we bought little Christmas containers from the dollar store to deliver them in and gave them away for the holidays. These were super simple and kept really well just sitting out on the counter. So without further adieu, here is the Christmas cream cheese mint recipe.
4 ounces cream cheese, room temperature
1/2 teaspoon peppermint extract
3 cups powdered sugar
Beat the cream cheese with a mixer until smooth, add the peppermint and half of the powdered sugar and beat again until combined. Add the remaining sugar and beat until well combined. Add a few drops of food coloring at this time if you would like. Use your hand to shape into small 1/2" balls and place them on a wax paper or parchment lined tray. Press each individual mint down with a fork and let sit for 1-2 hours.
