Every year, on the first day of the year, my great-grandma would put together sauerkraut balls. This is a tradition in my family based on the wives tale that eating cabbage on the first day of the new year will bring you luck for the rest of your year. I know it sounds gross, but they are actually quite delicious and I want to fix them for everything. Well, she passed away this past November and I miss her dearly. Luckily, I was able to make them with her last New Year's. In her honor, I am sharing a bit of her luck with everyone else this year.
Ingredients:
Twelve ounces of Italian sausage
Sixteen ounces of strained sauerkraut
Three ounces of cream cheese
One egg
One cup of milk
Corn flakes (crushed)
Procedure:
1.Brown the sausage in a frying pan.
2.When the sausage is browned, turn off the fire and add the cream cheese.
3.Mix the cream cheese and sausage completely, then add the sauerkraut.
4.After it is all combined, put this mixture in the fridge until cool.
5.Once cool, combine egg and milk in one bowl and have the corn flake crumbs in another.
6.Roll the sausage-sauerkraut-cream cheese mixture into balls.
7.Cover each ball in egg-milk and then roll in the corn flakes. Repeat.
8.Bake in the oven at 350 degrees for ten minutes.
