Delicious Vegan Thanksgiving Dishes

For all of you fellow health conscious, animal loving, environmentally friendly beautiful humans out there, here is a list of delicious Thanksgiving meals.

1. Roasted Tofurky with Sauteed Mushrooms

Ingredients

Tofu (as much as needed)

Teriyaki sauce

Mushrooms

Onion Powder

Garlic Powder

Salt and Pepper

Vegetable Oil

Procedure:

Cut the tofu into desired shapes. Spread teriyaki sauce, and sprinkle onion powder, garlic powder, salt and pepper as needed to marinate the tofu. Store the marinated tofu in refrigerator for 30 minutes. In the meantime, pour a tablespoon of vegetable oil in a non-stick pan and saute the mushrooms in low heat. After 30 minutes have passed, take out the tofu and bake in 350F for 20 minutes. Serve the tofu with the sauteed mushrooms

2. Vegetable Cutlet/Chops (Bengal Style)

Ingredients

Bread Crumbs

Sweet Potatoes

Green Pepper

Oregano

Mushrooms

Procedure:

Slice the mushrooms and green pepper into small pieces. Boil the sweet potatoes until they become soft. In a clean bowl, mix the sliced mushrooms, green pepper, oregano and softened sweet potatoes together. Using your hands, roll the mixture into balls and then create a circular structure out of the ball so it turns into cutlets. Cover the cutlets with bread crumbs and bake at 350F for 30 minutes.

3. Eggplant Steak with Roasted Veggies

Ingredients

Eggplants (as much as needed)

Chili Sauce

1/2 cup Roasted Red Peppers

Mushrooms

2 Green Peppers

1 cup Olives

2 Tomatoes

2 teaspoons Garlic Powder

Vegetable oil

Procedure

Slice the green peppers, tomatoes and mushrooms into small pieces. In a clean bowl, mix the sliced peppers, tomatoes, mushrooms with the roasted red peppers and sprinkle 2 teaspoons of garlic powder. Let the vegetables bake at 350F for 20 minutes. In the meantime, pour 1 tablespoon of vegetable oil in a non-stick pan. Slice the eggplants so that they are flat and place on the pan with the oil. Pour chili sauce as desired. Saute until the eggplant shows a brownish color. Serve the eggplant steak with the roasted veggies.
