It's hard to believe that this smooth and creamy cauliflower soup has no dairy and is very low calorie. With only three main ingredients, this soup is perfect for a simple and cozy winter lunch.

Ingredients:
1 onion
2 zucchinis
1 cauliflower
Tandoori powder (optional)
Salt
1 tbs. coconut oil
Almond milk, unsweetened, (optional)
Directions:
Step 1:
Coarsely chop your onion, zucchini's and cauliflower.
Step 2:
Place onions into a pot with 1tbs. of coconut oil and keep at high heat. Stir occasionally until onion becomes almost transparent.
Step 3:
Add your zucchinis and cauliflower into the pot and cover with water. Remove from heat once a fork can easily go into the cauliflower.
Step 4:
Pour veggies and water into your blender. Blend until smooth. Add salt and tandoori powder to taste. To make your soup a bit thicker add a small amount of almond milk, about 1tbs. If you cannot blend the entire mixture in one go, blend half of it, and then the other.
