My favorite way to meal-prep is to take one ingredient and use it a bunch of different ways. This week, my core ingredient was cauliflower! Cauliflower is a protein-filled, low calorie vegetable that is super versatile-- you can chop it, mash it, and roast it. It is pretty flavorless, so for me, it works as an awesome substitute for my beloved carbs like rice and pasta.
Here are the meals I made this week with superfood cauliflower!
1. Spinach Pasta with Roasted Cauliflower
I recently discovered Miracle Noodles-- here's the deal:
-Made from the root of the konnyaku imo plant.
- Only 15 calories per serving.
-Gluten-free pasta.
I bought the spinach flavor, but there's a bunch of different options, like fettuccine, rice, and garlic and herb. For this meal, I mixed spinach Miracle Noodles, roasted cauliflower rice, olive oil, parmesan cheese, garlic salt, and pepper. It is a super simple, low-calorie, delicious meal that will definitely be in my permanent meal-rotation.
2. Roasted Chickpeas and Cauliflower with Parmesan
I started this one by throwing some chickpeas in a pan with olive oil, and letting them roast for about 3 minutes. Next, I added some chopped cauliflower to the pan along with some parmesan cheese, chicken bouillon, some more olive oil, and pepper.
3. Cauliflower Fried "Rice"
This is how I first discovered how amazing cauliflower is. I absolutely love fried rice, but was wishing there was a lower-carb substitute to rice... and that's where the cauliflower comes in!
For this recipe, I started by frying up 3 eggs with some salt and pepper. Next, I added some cauliflower rice, chopped broccoli, onions, carrots, carrots, and bell peppers, and finished off with some soy sauce!
4. Mashed Garlic Cauliflower
I started by mashing up some cauliflower and tossing it in the crock pot. Then, I added some rice and water, along with some garlic and a little bit of cheddar cheese. All done!
5. Buffalo Cauliflower Dip
First, I mashed up some cauliflower and threw it in my crock pot. Then, I added 1/2 cup of cream cheese, 1/4 cup of buffalo sauce, and cheddar cheese. I topped it off with some scallions and more cheese. This one was seriously amazing, and now a go-to snack!
6. Buffalo Cheesy Grits with Cauliflower
I had grits for the first time at a Southern brunch last weekend, and I absolutely love them. They're super versatile, and can be sweet or salty! For this meal, I first prepared the grits: I boiled 2 cups of water and added 1/2 cup of grits. Then, I roasted up some chopped cauliflower and added some chicken broth, olive oil and garlic. Next, I mixed together the cauliflower and grits and added some shredded colby jack cheese-- that's it!
