Being a college student is hard. Every week is a consistent bombardment of lectures, assignments and due dates. Having just transferred to a new school, I am definitely feeling this strain. Sometimes it feels like there’s nothing else to do but eat, sleep and work.
It’s because of this that we need to make sure that these activities are the greatest that they can be, and of course, what’s better to eat than a delicious homemade cookie?
And so, without any further ado, here are three cookie recipes guaranteed to solve all of your school problems…
Okay, well, maybe not that. But they do taste really, really good.
1. Snickerdoodles
Ingredients:
-1 cup soft shortening
-1 cup sugar
-2 eggs
-2 ½ cups sifted flour
-1 tsp. baking soda
-2 tsp. cream of tartar
-½ tsp salt
-2 tbsp. cinnamon
-2 tbsp. sugar
Instructions:
Cream sugar and shortening together; add eggs and beat with a mixer until light and fluffy. Sift together dry ingredients and add to sugar mixture. Beat only until blended; chill. Shape into walnut-sized balls, then roll in mixture of sugar and cinnamon. Place 2 inches apart on an un-greased cookie sheet, and bake until lightly browned, but still soft, in a 375 degree oven for 10 to 12 minutes.
2. Oatmeal Cookies
Ingredients:
-3 cups old fashion oatmeal (not instant)
-¾ cup sugar
-2 sticks of butter
-2 eggs
-¾ cup flour
-½ cup raisins (optional)
-½ cup chopped walnuts (optional)
Instructions:
Put the oatmeal and sugar into a bowl; add melted butter and mix. Stir in eggs until blended, then stir in flour until blended. Add in raisins/walnuts. Place onto a greased cookie sheet, and bake in a 325 degree oven for 17 minutes.
3. Chocolate Chip Cookies
Ingredients:
-¾ cup butter
-1 ¼ cup brown sugar
-2 tbsp. milk
-1 tbsp. vanilla
-1 egg
-1 tsp. salt
-¾ tsp. baking soda
-1 ¾ cup flour
-1 cup chocolate chips
-½ cup chopped walnuts (optional)
Instructions:
Mix butter, brown sugar, milk and vanilla until blended. Add remaining ingredients and mix until blended. Place onto a greased cookie sheet, and bake in a 325 degree oven for 10 to 12 minutes.
