Recipes so easy, a college student could make them

As a college student, your thought processes are somewhat limited. Those four years of your life boil down to fit under a few small categories, most of which bring you grief somewhere along the way. They are, in no particular order; Academics, Finances, Social Life, and Food. Now I'm not a master scholar or financier, nor do I have what is considered an 'average' social life (My Friday nights primarily consist of stuffing my face with pizza while playing Dungeons & Dragons), but I have learned that college food brings tears to the eyes of many students(either while choking it down, or 45 minutes later in the bathroom). That being said, here's a few culinary options for the days when you want to dodge the commissary chow.

The Watney Potato Platter

Wash raw potatoes under cold water, puncture four to five times (failure to do so WILL result in exploding potatoes) microwave until soft and easily sliced in half with knife. Serve with salt, pepper, and/or ketchup. OR, if you happen to have access to more resources than a mini-fridge and a microwave, slice potatoes in half and put a slice of provolone cheese on each, microwave an additional minute to melt cheese. Garnish with bacon bits, scallions, or heart attack inducing amounts of sour cream. And maybe ketchup. Really can't go wrong with that stuff.

The Slightly-Less-Disappointing Microwave Burrito

Remove burritos from plastic bag. Let sit until thawed (or microwave defrost). Heat oil in the bottom of a saucepan, add thawed burritos. Cook 5-7 minutes on each side, or until golden brown. Drop some cheese on them and drown them in salsa, sour cream, cheap hot sauce.... Or ketchup. Just an idea. Someone tell me how it goes if you try it.

Dads' Leftover Macaroni Casserole Thingy

Boil and drain plain elbow macaroni, brown some ground beef, saute some onions, and crack open a jar of pasta sauce. Mix components and layer into a oven(or microwave-safe) dish with layers of cheese(preferably mozzarella or provolone) throughout. Throw in oven(or microwave) until cheese melts everything together. This stuff keeps and reheats well, so a good sized batch can get you through a couple days. Pairs well with Arnold Palmer Ice Tea/Lemonade, as well as an after dinner breathe mint. Especially if you plan on talking to anyone, those onions are some powerful stuff.

And yes, I realize all of these include the literal use of melted cheese. Cheese is like the duct tape of food, it brings other foods together in complementary ways.

For as long as I can remember, I have been listening to The Beatles. Every year, my mom would appropriately blast “Birthday” on anyone’s birthday. I knew all of the words to “Back In The U.S.S.R” by the time I was 5 (Even though I had no idea what or where the U.S.S.R was). I grew up with John, Paul, George, and Ringo instead Justin, JC, Joey, Chris and Lance (I had to google N*SYNC to remember their names). The highlight of my short life was Paul McCartney in concert twice. I’m not someone to “fangirl” but those days I fangirled hard. The music of The Beatles has gotten me through everything. Their songs have brought me more joy, peace, and comfort. I can listen to them in any situation and find what I need. Here are the best lyrics from The Beatles for every and any occasion.

Small towns certainly have their pros and cons. Many people who grow up in small towns find themselves counting the days until they get to escape their roots and plant new ones in bigger, "better" places. And that's fine. I'd be lying if I said I hadn't thought those same thoughts before too. We all have, but they say it's important to remember where you came from. When I think about where I come from, I can't help having an overwhelming feeling of gratitude for my roots. Being from a small town has taught me so many important lessons that I will carry with me for the rest of my life.

I can't say "thank you" enough to express how grateful I am for you coming into my life. You have made such a huge impact on my life. I would not be the person I am today without you and I know that you will keep inspiring me to become an even better version of myself.

Course registration at college can be a big hassle and is almost never talked about. Classes you want to take fill up before you get a chance to register. You might change your mind about a class you want to take and must struggle to find another class to fit in the same time period. You also have to make sure no classes clash by time. Like I said, it's a big hassle.

This semester, I was waitlisted for two classes. Most people in this situation, especially first years, freak out because they don't know what to do. Here is what you should do when this happens.
