Everyone has something they dream of. Some of us have kept the same dreams since we were kids and saw something inspiring, and some of us aren’t exactly sure if they have found their ultimate dream yet. There are also people like me who have dreams that change with time. In the end everyone has something, everyone has that one thing either in the back (or front) of their mind of how they want their life to be. Many of us want to find the reason they were put on this earth, want to leave a legacy, want people to remember their name, and most of all they want to be able to look back on what they did and smile and know they did the right thing. Most of all, all we want is to be happy.

Chasing your dreams is easier said than done-- trust me, I know. The long and sometimes lonely road to what you want to achieve is brutal and unforgiving. Sometimes one mistake, one tiny mistake, can mean restarting your journey or unfortunately, forfeiting your dream. Sometimes your dreams are so out of reach it just seems flat out impossible to ever reach them. But let’s put it all into perspective. A dream starts unknown to you completely. You’re not born into a certain dream/path, you have a choice of what you want from your life. Sometimes a dream takes its root when you are very young and you see something that really blows your mind; from that point, you want to reach that goal you set for yourself. Other times it's literally a dream that comes to you while you sleep. You might wake up one day and realize what you want and sometimes it will be right in front of your face, but your mind needed to give you a little extra notice. So, what does all this mean? Dreams are not easy to achieve, but the fact you are inspired in some way to even attempt to achieve it is what makes the journey worth it.

Here comes the hard and sad part: many people you come across, some not very close to you, and others closer than you would expect, are going to disagree with your dreams. Your dreams might be viewed as “stupid,” “unethical,” “intangible,” or “ridiculous,” but honestly, screw what they think. Your dream is your dream, not theirs. Anybody that really thinks the thing you hold most dear is “stupid” is the stupid one. No one has any say in your own happiness except for yourself. If someone opposes your dream to the point where they hope you abandon it, the only thing you need to abandon is their opinion. You don’t need their acceptance if they don’t value what you want. Your dreams and aspirations are so much more important than holding a friendship or relationship with someone who won’t stand beside you no matter what they think. Even the fact that they questioned you in the first place should be a major red light. If your dream means anything to you, don’t let the worry of losing the acceptance of others and your public perception change how you feel.

If you're struggling with your dreams, if things are seeming hopeless, if you are losing people, read these words. We all want to be somebody. You are not alone. Everyone has that one thing they hold on to. Some might not admit it because they fear what others will think, but every single person has that one hope they someday wish to have. Some dreams are simple. Some will achieve theirs without too much struggle, but others will face hardship. Some of us will hit walls, some of us will drown in doubt and fear, some of us might not think it’s possible to carry on, but it’s alright.

It’s alright because we are going to make it. It’s alright because one day the world is going to hear that song, one day the public is going to read that book, one day you’ll find your happy ending, one day you’ll prove those people wrong, one day you’ll find that person you’ve been searching for, one day people will remember your name, one day you’ll change someone’s life. I promise you your dreams are worth fighting for. I haven’t achieved all my dreams yet, and I’ve had some successes and failures. I know how cold and unforgiving the road is, and I know how hard it is to get people to understand what you want. Continue to chase your dreams, continue to think outside the box, continue to be unique, continue to be you. The world needs you.

Working in the restaurant industry is possibly the most fundamentally challenging occupation I have ever experienced when it comes to hospitality and customer service. When you go to a five-star restaurant you expect the time of your life, a two hour getaway, a walk through another time period (rustic Italy, France, Spain, etc), or simply a honeymoon undergo. What you don't see are the behind the scenes scut work: carrying trays, polishing glassware and silverware, kitchen chaos, the list is endless. Now, I'm not saying being a host, server, or bartender is the worst thing in the whole wide world, there are definitely worse things. But the fact of the matter is that it isn't always sunshine and rainbows. In the two years that I have spent in restaurant and customer service, I have spoken my share of expletives, yelled at kitchen staff, and dealt with not-so-happy guests. It isn't easy to keep a bright and shiny smile on your face when all you want to do is choke every person who walks near you. Anyone who has spent even two weeks working in a restaurant understands the rigor and stress that comes with it. Restaurant culture is a tiny world in and of itself that operates on its own principles and creates its own society. It even has its own language. The sayings "runner", "corner", and "on a bus" wouldn't make sense to anyone otherwise. My mother and I both work in a restaurant and the best advice I can give someone going out to eat is to treat us like people. Yes...believe it or not we are people, people. Say "please" and "thank you", or stack your cleared plates before a busser gets to the table. Trust me, the gesture goes a lot farther than you may think.
